Egg Salad

6 hard boil eggs chilled n peeled
1/4 c mayonnaise
2 ts lemon juice
1 celery stalk chopped
2 scallions finely sliced white n pale green part only
1 tb parsley flakes
salt n pepper to taste
combine eggs mayonnaise lemon juice scallions and parsley in bowl squeeze eggs through fingers with hands closed mixing with bowl until desired consistency season with salt n pepper

    Just substitute 1/4 c Greek yogurt for the mayo. I also like to add a 1/4 cup of shelled cooked edamame

    that doesn't sound too good to me. greek yogurt - which i eat all the time - doesn't taste anything like mayo. mayo is slightly sweet, greek yogurt is sour. and maybe only half the yolks... edamame seems like a pretty green taste for egg salad, but everyone likes different tastes.

    You could swap mayo for helmans light or fat free miracle whip...

    I agree that the greek yogurt would be a no go. That is just horrible. And the edamame is a plus. I have had egg salad with edamame in it once, but have never figured I needed to add it all the time. You can use sour cream/cream cheese in place of mayo. Idk how much more healthier it is, but I think it is healthier? I will have to look it up.

    *EDIT*
    I looked it up and cream cheese and sour cream is healthier than mayo:

    Cream Cheese - 2 tablespoons (equal to about 1 ounce) about 99 calories and 9.9 grams of fat.
    Mayonnaise - 2 tablespoons - about 206 calories and 23 grams of fat.
    Sour Cream- 2 tablespoons - about 50 calories and 5 grams of fat

    So go ahead and try this out.

    Check out Greek yogurt egg salad recipes on Yummly and Pinterest. Or just do a google search. I think you would be pleasantly surprised. Some do a full substitution, some do half and some add avocado with the yogurt for the healthy fat.

    Oh yum, cottage cheese really does work well with egg, salmon and chicken salad. If I have a Granny Smith apple I toss that in too!!

    I guess I'm surprised at really how low this is..... This recipe is for more than one serving, so I guess I would keep this for a ingredient and better taste.....especially using that many eggs.... Just my opinion..

    I think it taste fine, it doesn't taste like chemicals at least. Then again I'm not a big fan of Mayo in any variation. lol I only use it in my tuna salad and then I don't use very much (2tbsp per can of tuna)

    Personally greek yogurt as a mayo substitute is gross! It ruins everything.

    Another thing you can use is mashed avocado. Very healthy fat,and a great substitute for mayo.

    Just because this is a diet and fitness site doesn't mean we need to cut out the foods we enjoy. :laugh:

    Though on a serious note, Wal Mart has some light mayo (Great Value brand) that is like 35 calories per serving and the taste isn't too big a difference from regular mayo to me.

    Kraft has light mayo, too. It doesn't taste that great, but it's something.
