Hello everyone! I wanted to share a super easy and Keto Friendly Recipe for everyone to try. I love this recipe because it satisfies my lox and bagel cravings in a low carb way. And if you have any keto or low carb recipes please do share!
Smoked Salmon and Cream Cheese Frittata:
Ingredients:
4 Eggs
2 oz Cream Cheese, Cut into Bite Sized Pieces
1/3 Cup Red Bell Pepper, Chopped
1/2 Cup Red Onion, Chopped
2 TB Butter
2 TB Heavy Cream
2 tsp Fresh Parsley
2 Sliced Smoked Salmon, Chopped
A Pinch of Nutmeg
Salt and Pepper to Taste
Directions:
Preheat oven to 375 degrees. In an oven safe pan melt butter and cook onion and bell pepper until soft. Set Aside. Cook salmon for about 1 minute until fragrant. Set Aside. In a bowl mix eggs, cream, parsley, nutmeg, salt and pepper. Whisk until it bubbles. Add to pan. Put onion, bell pepper, salmon, and cream cheese on top. Cook until edges brown. Bake in oven for 20 minutes.

Fruit Salad with pudding.
Ingredients:

1 (29 ounce) can peach slices, undrained
1 (20 ounce) can pineapple chunks, undrained
1 (3 1/8 ounce) box dry vanilla instant pudding mix
1 lb strawberry, stemmed and quartered
1 banana, sliced
1/2 pint blueberries
1 bunch grapes (I use the red ones)
1 -2 tablespoon sugar (optional)

In a large bowl, combine peaches, pineapples, and vanilla pudding mix.

This includes the juices from the cans.

Mix well until pudding is dissolved.

Stir in strawberries, banana, blueberries, grapes, and sugar if desired.

Chill.
