I have my old reliable recipe with peppers, parmesan cheese, etc., but I'm wanting to experiment with something else and try something new.

    Here is one that I have made several times and I love it! I add chopped sauteed mushrooms in it too.

    UGH! I had one made with oatmeal and shredded carrots and it was the bomb! Can't find it now though... :angry:

    There's a recipe for mini turkey meatloaves (made in a muffin tin) on bodybuilding.com (a Jamie Eason recipe). They are surprisingly super delicious!

    It's says use chicken but I use turkey instead. Also I cut the ketchup, IMO it has no place on an type of meatloaf.

    I don't remember the recipe
    but there mashed potato flakes (in place of bread crumbs)
    1 egg
    Salsa
    Frozen corn
    some spices to taste.

    I have 2 ways that I love to do meatloaf and both involve liquid smoke! Just a touch goes a LONG way and it adds an amazing flavor to any way you want to prepare it.

    1 pound ground turkey
    1 pound ground pork
    1/5 C instant brown rice
    2 eggs
    worcheshire sauce to taste
    garlic salt to taste
    peper to taste
    2-3 dashes of liquid smoke

    Pre-heat oven to 375.

    In a pan put tomato sauce on one half and bbq sauce on the other.

    divide mixture into 2 even loaves packing firmly. Lay 1 loaf on each side, appropriately coat with ketchup or BBQ sauce, then cover with foil and cook for 45 minutes. Uncover and cook for an additional 15 minutes.

    I have added a layer of spinach, a layer of cheese and peppers just for fun, and each way has been fabulous.

    (and yes, I always have to do the 2 different sauces... I have 1 child that will puke with ketchup and the other that HATES bbq sauce, but it works because I get a piece of each, yummy)

    Real simple one I use is:

    1lb lean ground turkey
    1 jar salsa (whatever you like).
    1 egg
    Lite bread crumbs to bind

    I have one for Broccoli-Cheddar Stuffed Turkey Meatloaf (it's seriously amazing)

    1/2 cup chopped onion
    1/2 cup dry quick cooking oats (I used Quaker)
    2 large eggs
    3 tsp worcestershire sauce
    2 tsp chopped garlic
    1-10oz package frozen, chopped broccoli (make sure to let it thaw completely and drain any remaining water from the package)
    1 cup reduced fat cheddar cheese
    20oz package Jennie-O Extra Lean Ground Turkey Breast

    Preheat oven to 350 degrees F

    In a large bowl, combine the ground turkey with the first 5 ingredients and mix well (I usually mix it real well using my hands). Once that's complete, split the turkey mixture in half. Take a meatloaf pan and line it with aluminum foil (make it super easy to clean up) Lightly spray with olive oil cooking spray. Press half the turkey mixture in the bottom of the pan. Then, mix together broccoli and cheese in a separate bowl. Add the broccoli cheese mixture to the top of the meatloaf already in the pan. Then take the second half of the turkey mixture and press on top of the cheesy broccoli, making sure to cover it completely.

    Bake for 1 hr at 350. Let cool for about 5 mins, cut into 6 slices and enjoy!!

    The Neeleys from the Food Network have a really good one! It does use a lot of blue cheese, though, so in the end I'm not sure it's necessarily that much healthier than regular meat loaf, but it tastes fantastic!!

    Not a turkey meatloaf recipe, but a good alternative to traditional meatloaf.

    It is made with lentils and oats and it is really good and easy. The recipe is vegan, but I use regular Worcestershire sauce, so mine is only vegetarian. The recipe says to cut the loaf into 5 servings, but I usually cut mine in 8 slices and 1 to 1/2 slices is filling with a salad and some veggies on the side, so the calories aren't too bad either.

    Made this up one night, it was sooo good, my husband does not like ground turkey as a substitute for ground beef, so I was trying to think 'outside the box'!

    Turkey Loaf:

    ground turkey (about 1 - 1 1/2 lbs)
    plain bread crumbs (1/4 - 1/2 cup)
    1 egg (use 2 eggs if using larger amt of gr turkey)
    poultry seasoning - about 1 tbsp (use a good brand that does not contain salt as an ingredient)
    1/2 cup diced onions
    1/2 cup diced celery
    2 - 3 tbs light margarine (use butter if desired)

    Saute onions and celery in margarine until they are soft, cool. In a bowl combine ground turkey, breadcrumbs, egg and cooled celery/onions, and poultry seasoning. Mix together well and form into loaf, or pat mixture in a loaf pan. Bake 350 covered about 1 hour (more if using the higher amount of gr turkey. Goes well with steamed green beans and a baked sweet potato

    I don't measure, but every time I make it, everybody wants more. So everything is a guesstimate.

    2lb Jennie O' Ground Turkey
    3- celery stalks chopped (helps with keeping it moist)
    1- small onion
    1 tsp minced garlic
    2 tbsp cajon seasoning
    2 tsp of ground cuman
    1 tbsp sea salt
    1 tbsp of black peppercorn
    2 tbsp of Chipotle Chile
    3 tbsp of honey dijon mustard really helps keep it moist because of the turkey & is kick *kitten* anyway)
    cup or so of bread crumbs

    400 degrees for 40 minutes
    If you put into muffin tin liners you get 12 individual servings, perfect little instant protein snack.
    149 calories, 6g of carbs, 6g fat, 17g protein, 1 g fiber

    16 oz 93% Ground Turkey
    1/4 cup plain panko bread crumbs
    1/4 cup Italian panko bread crumbs
    1 packet herb ox no sodium beef broth
    1/4 cup ketchup
    1 egg
    Sprinkle Garlic and Onion powder over the mix (a layer)
    Double layer cover the mix with chili powder
    Make into a loaf
    Cook @ 400 degrees for about 20 minutes or 165 degrees

    It's delicious and easy.

    Spice up your old recipe by wrapping it in lower sodium bacon. Bacon wrapped meatloaf = yum!

    This is not only the best turkey meatloaf I've ever tried, but it is quite possibly my favorite meatloaf recipe of any kind, ever. Slightly adapted from Allrecipes.com:

    Ingredients


    1/4 cup quinoa
    1/2 cup stock
    1 teaspoon olive oil
    1 small onion, chopped
    4 large cloves garlic, chopped
    2 medium carrots, chopped
    1 (20 ounce) package ground turkey
    1 tablespoon tomato paste
    1 tablespoon hot pepper sauce (Sriracha is good)
    2 tablespoons Worcestershire sauce
    2 eggs
    1 1/2 teaspoons salt
    1 teaspoon ground black pepper

    Glaze:
    2 tablespoons ketchup
    2 teaspoons Worcestershire sauce


    Directions

    Bring the quinoa and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the quinoa is tender, and the water has been absorbed, about 15 to 20 minutes. Set aside to cool.

    Preheat an oven to 425 degrees F.

    Heat the olive oil in a skillet over medium heat. Stir in the onion, garlic, and carrots; cook and stir until the vegetables have softened and turned translucent, about 8 minutes; remove from heat to cool; pulse briefly in food processor.

    Stir the turkey, cooked quinoa, onions, tomato paste, hot sauce, 2 tablespoons Worcestershire, egg, salt, and pepper in a large bowl until well combined. The mixture will be very moist. Shape into a loaf on a foil lined baking sheet. (Note: do NOT bake this in a loaf pan, or you'll get a soupy mess.)

    Combine the ketchup, 2 teaspoons Worcestershire in a small bowl. Spoon the glaze over the top of the meatloaf.

    Bake in the preheated oven until no longer pink in the center, 50-60 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let the meatloaf cool for 10 minutes before slicing and serving.

    I subbed the ketchup for 2 TB tomato paste and didn't put any on the top, and the panko for 1/4 cup quinoa flour (what I had on hand), and since no panko- didn't need the milk. Also, just cause I had it in the fridge, I threw a handful of basil into the mix.

    Even the hubs and 6 yr old liked it!
