Zucchini beef & rice

1 lb ground beef
2 c quartered sliced zucchini lengthwise
1/2 c chopped onions
1/2 tsp salt
1 can 14.5 roasted diced tomatoes with garlic undrained
1 c water
1 1/2 c of instance white rice uncooked
3/4 c shredded cheddar Monterey jack chees blend
1 1/3 c 310 cals per serving
in large skillet med heat cook beef zucchini onion salt for 8 mins or until beef is crumbled stirring occasionally drain well add undrained tomatoes water bring to a boil add rice stir well cover remove from heat let stand 7 mins or until liquid is absorbed sprinkle with cheese
