Recipe needed!!

I was wondering if anybody can help me out here. I need a healthy and easy snack recipe that includes potatoes, corn or chickpeas please. Thanks !

    Spicy chorizo, lentil and chickpea soup. Fry chorizo and onion add lots of stock then add chickpeas, lentils and any veg that you like. Cook lentils for about 20-30mins minimum. No blender needed.

    I think you can pop chickpeas too (not in the same way) - and then... Cajun seasoning? Or wasabi?

    Bake the potato, steam the corn, and/or roast the chickpeas

    Potato wedges (no oil/seasoning needed but you can add if you want)
    1. Preheat oven to 450 degrees Fahrenheit.
    2. Slice potato up into wedges; if adding oil, add now along with spices/seasonings.
    3. Place on parchment lined baking sheet.
    4. Bake 20-30 minutes (depending on your oven and how large you sliced the potato wedges), flipping halfway through.
    5. Eat with any condiments you like.

    Japanese Style Corn Soup
    1 Tbsp butter
    1/4 white or yellow onion, chopped
    1 can corn (about 15 oz), drained
    1 cup of milk
    1/2 cup of chicken stock

    1. Saute onion in butter for about 5 minutes until onion is soft.
    2. Add corn, continue sauteing for another couple of minutes or so.
    3. Pour in milk and stock; heat until warm but not at boiling point.
    4. Pour mixture into a blender. Blend until smooth and creamy.
    5. Pour back into pot and reheat until hot and ready to serve.

    Easy Peasy Roasted Chickpeas (from Allrecipes)
    1 can chickpea (15 oz), drained
    2 Tbsp olive oil
    1 tbsp cumin
    1 tsp garlic powder
    1/2 tsp chili powder
    Pinch of salt and pepper
    Dash of crushed red pepper

    1. Preheat oven to 350 degrees Fahrenheit.
    2. Mix together oil and seasonings; mix in chickpeas and combine completely.
    3. Roast in oven, stirring occasionally for 45 minutes until crispy and slightly brown.
    4. Eat like chips.

    I use half a bag of dry ones, instead of the canned version. Just soak them overnight or you can quick soak them.

    Spicy Roasted Chickpeas

    INGREDIENTS

    1 15 oz. can of chickpeas (garbanzo beans)
    1 tablespoon olive oil
    1/2 teaspoon sea salt
    2 teaspoons of spice mixture (a curry, Morrocan, or Mexican spice mixture work well)

    DIRECTIONS

    Make sure the chickpeas are completely dry after draining and rinsing them. Otherwise they'll end up chewy and soggy.

    Preheat oven to 400°F.
    Drain and rinse chickpeas in a colander. Pat dry.
    Toss chickpeas in a medium sized bowl with olive oil, sea salt, and spices.
    Arrange chickpeas on a baking sheet in a single layer.
    Bake for approximately 30 minutes or until crispy. While baking, shake pan or stir chickpeas to avoid burning.
    Transfer to a serving bowl.
    If desired, sprinkle and toss with more spices.
