I looked up a few cauliflower mash recipes that this thread has, but I didn't find something so similar to this one. If there is a same recipe up somewhere, then please let me know and I'll take it down to not have a duplicate
Basically, since I'm doing keto, I am testing out new foods and I came across a cauliflower mash. I edited the recipe a bit and this is what I made for my breakfast today (my bf also ate it and said it was super delicious )
What you need:
1 fresh cauliflower - mine weighed 900gr
5 slices of thin regular cheese
5 slices of thin strips of bacon
2 tbsp of Philadelphia original cream cheese
Preparing the meal:
Remove the leaves and wash the cauliflower with cold water, then either cut or tear pieces of it (start from the bottom if you tear them by hand). I cut the teared bits really small, so that I could process them better afterwards, but as long as you keep the bits in manageable sizes you'll be okay. Put them in a boiling water and also cook the bacon slices on a pan for about 3 minutes. Do not add any oil etc. on the pan as bacon will use its own grease to cook. While waiting for the bacon to cook, take the slices of cheese and cut them into small bits, and do the same with bacon once it's done. After about 10 minutes your cauliflower should be done (you can check it by taking a small piece, putting it on a plate and try to smush it with a fork, the easier it turns into a mash the better). Once you take your cauliflower off the stove (keep the stove on a minimum heat for the time being, you'll use it again), add 2 tbsp of cream cheese and mix it really well. I used a fork to turn the mixture into a mash and it worked really well. When that's done, add the cut pieces of bacon and cheese, stir, and put the pot back on the stove with minimum heat and let it sit (while stirring, to make sure the cheese doesn't just end up in one place) for as long as you see the cheese has melted completely. Add salt/sea salt to your taste - I put about 1 teaspoon of sea salt.
With the particular ingredients I had, I got a total of 142 calories, 7 carbs, 10 fat and 10 protein per serving (1dl is one serving for me). You can of course take as much as you like, but overall the calories stay rather low for the delicious meal you get
To get more proteins, I also cooked unflavoured chicken filet bits on a pan without adding any extra oil/fat, and took a 1dl serving of that as well (for chicken 1dl was less than the mash). To get a bit more fats because of keto, I also had black coffee with 15ml of coffee cream.
I'm not sure how to add a picture so I'll just link the image I took of my breakfast:

It really is The 2 tbsp of cream cheese really changes the texture and adds a more creamy taste to the mash, but it doesn't get too cheesy so it's just right hehe0
