Don't you just love those sweet potatoes!

I had a craving this lunch time for a sweet potato and this is what I had!
Ingredients:
1 whole sweet potato (washed)
1/4 red onion
1 tbsp greek yogurt
1/4 can of tuna (drained)
Chillie powder (or actual chilles if you have them)
Coriander to taste
How to make:
Firstly prick holes using a fork all around the potato to let out the trapped steam when cooking.
Secondly, put the potato in the microwave and cook on full for 3-4 minutes (cooking times vary
With every machine!) or until you're able to put a knife through it easily. While the potato is cooking
Put the drained tuna into a bowl and leave aside. Cut up your red onion, chillies (if you have them) and coriander.
Once the potato is fully cooked and is soft, take out of the microwave and cut it length ways down the center.
Put the tuna evenly ontop of the two halfs, followed by the onion and chillies ( or chillie powder ).
Then proceed to put on 1 tbsp of low fat greek yogurt followed by the coriander and more chillies to taste.
This all comes to:
Cal: 238
Fat: 3g
Saturates: 2g
Sodium: 0.3mg
Carbs: 44g
Fiber: 5g
Sugar: 13g
Protein: 12g
And one heck of a lunch
