My 6 year old son LOVES sausage McGriddles...I would like to make a homemade version that's obviously much healthier than McDonald's version. Anyone have any suggestions? TIA!

Make pancakes with a little bit of syrup in the batter. Use turkey sausage patties :) If you are really stuck on the calories use egg whites :D

When using syrup, I use pure maple syrup instead of sugar-based syrup. Might try adding that to the batter.
  • Make small, thick pancakes with a tiny bit of syrup out (I recommend Bob's Red Mill pancake mix), Morningstar farms "sausage" patties (they are veggie and lower cal), egg whites, skip on the cheese, and presto! :D Good luck! I used to make batches of healthy breakfast sammies (whole wheat English muffins, fried egg, faux sausage), wrap them in plastic wrap and freeze enough for the whole week. (Yes, you can freeze eggs! http://www.eggs.ca/eggs101/view/39/egg-storage-freshness-and-food-safety) I'd just heat them on a low heat in the microwave for 3 minutes for a very quick breakfast that is husband and kid approved.

Make your usual light pancakes, no bigger than about 3-4" across. Lightly brush with sugar free maple syrup on one side only. Cook maple turkey sausage patties, and remove to warming plate. Scramble egg whites, and then assemble sandwiches with a slice of light cheese (Sargento's thin slices work well), and allow to melt before chowing down. Soooo good! :)
