Zucchini Dishes to Make Ahead and Freeze

My MFP Familia know that we LOVE zucchini/gourgettes/italiansquash in our house! We pretty much eat it every day! Anyway, I bought a decent amount on Saturday and on Sunday evening a friend gave me a good amount from her garden... Garden fresh! DELISH! and so much better!
I plan on freezing the store bought zukes ( we are going outta town for vacation) any favorite recipes you care to share that you KNOW freeze well?
Help would be greatly appreciated!

I like making parmesan zucchini sticks. I'll make a bunch of them, then freeze them. I'll reheat them in the oven as a substitute for French fries,

Freeze fritters in between parchment. Love these with yogurt and apricot preserves:

Freeze the cooked zucchini tots in bags and reheat in the microwave. This is a great way to get kids to eat vegetables.0 -

You're welcome. I had a glut of zucchini the last 2 years and made these often. Sadly, I didn't have room for any squash this year :frown:0

Oh yeah, good call. I made this recipe countless times last year. I would shred zuke then freeze, thaw to make the brownies. These are amazing, no one will know there's zuke in them...
