Breakfast Tacos

Ingredients

1 poblano pepper, diced
1/4 onion diced
2 oz thick cut ham, chopped
1 cup O Brien Potatoes or Hash Browns
2 eggs
4 egg whites
Salt and Pepper to Taste
6 corn tortillas
Optional: Salsa, Avocado, Cilantro, Cheese
Instructions

Spray a large saute pan with cooking spray and cook the onion, poblano, and ham until the onion becomes soft and translucent.
Add the potatoes and cook for an additional 5-10 minutes until the potatoes begin to crisp up on the edges.
While the potatoes cook, stir the eggs and egg whites together like you are making scrambled eggs. Add salt, pepper, and perhaps a dash of hot sauce.
Add to the potatoes and scramble until cooked to your liking. Taste and season with salt and pepper if needed.
Place in the tacos shells and add your favorite toppings.

    6-8 potatoes small diced
    7 eggs
    8-10 strips of bacon
    flour tortillas, cheese, salsa

    2 tbsp olive oil in a large pan, brown potatoes. Salt and pepper to taste.

    Slice bacon and prepare separately.

    Meanwhile scramble eggs in large bowl, add a tbsp of milk, pepper to taste.

    When potatoes are browned (soft inside, crispy outside), add bacon and eggs to pan. Turn to cook eggs.

    Spoon onto warmed tortilla. Top with cheese and salsa.

    They both sound great. But, yes I agree,being that we are all conscience of weight, please always include nutritional information. It would be sooooooo helpful.
