Cooking healthy and cooking veggies.

Can anyone please help in any ideas for cooking healthy and also cooking good tasting veggies. I am trying to get back on track with getting healthy but I'm not a veggie person. I am willing to try any good recipes that you consider your favorite. Thanks in advance.

    I love zucchinis. I usually slice them in veggie stick size and sauté them with a bit of olive oil, fresh garlic and salt/pepper to taste. I like them on the crunchier side, so just a few minutes, enough that they get a bit golden but not soft. Zucchini don't taste strong so it's always a good start. I also do the same thing with broccoli fleuret instead of zucchinis.

    Egg plant pizza is one of my all time fav. Slice the eggplant in pieces of 1/4 inches thick or so. put a slice of tomato and what ever veggies you fancy on a pizza (or in general). Pepper, mushroom, onion, etc. You can add a bit of olive oil, pesto or fresh herbs. 20-30 minute in the oven, you can even add some love fat cheese 5 minutes before the end. It's a great side dish. (sometimes I replace the eggplant with potatoes when I crave carbs)

    I enjoy carrots and turnips mash. just boil everything and mash it together. add salt and pepper, a tiny bit of butter so it's a bit creamier, it's delicious. I also *kitten* these to mash potato often so there's more nutrient them bland potatoes.

    Zucchini and tomatoes, diced together with garlic, salt, pepper et some of your favorite dried herbs. I enjoy it with thyme or oregano. Just diced everything in good 1-bite size, toss everything in a pan with a bit of olive oil until the zucchini is soft enough to your taste. This is also good on top of short pasta.

    You should try cauliflower rice. Grate the raw cauliflower (of blender/food processor but be careful it's not too small!). Sauté it in a pan with a bit of olive oil, garlic (if you like it), salt and pepper. Cook it for about 10 minutes on medium/high heat, It will become a bit golden brown. You want the cauliflower to cook but not get mushy. It still taste like cauliflower, but with a nice nut taste as well.

    I like Baked String Beans. Put into a ziploc bag with a small amount of Extra Virgin Olive oil, put onto a cookie sheet and then season with salt, pepper, garlic power (pick your own favorite)

    Its all about experimenting - be willing to try anything once.

    At first add butter and salt (or if its a salad, creamy salad dressing) to make it taste better and once you get used to the veggies try using less butter etc.

    Try roasting. - sweet potatoes, cauliflower, asparagus, squash, carrots - are all great roasted
