Why is losing weight soooo difficult

I've always thought losing weight was simple, eat less exercise more. Now you tell me I am "eating too less" and doing to much cardio.. Whet?! Seriously though, when I was eating below 1000 calories and burning almost half of that in exercise the weight was coming off.. Then it stopped! And it's been stalled at 147 -150 for 2 months now. I've increased my calories by about 250-500 a day so I bet at least 1200 and I cut down with the cardio. Still nothing. I'm confused and frustrated. I'm 5'5 by the way with a goal of 135lbs or 27' waist which ever comes first
What I eat at least 5 days out the week :
Breakfast
Fruit smoothie (200 cals)
Or bowl of fruit
Snack
Almonds (160 cals)
Lunch
Subway roast beef (370 cals)
Dinner
Baked chicken
Sweet potato
Vegetable (400)
Snack
100 calorie pack snack
Fruit (200)

I am noticing a serious lack of condiments, seasonings, oils, and beverages in your average day.
Do you throw a piece of chicken in the oven and cook it until it's done?
Do you always steam or boil your veggies?
Do you purchase your smoothie or make it at home?
Are you weighing everything?
Unfortunately, your estimates can be wrong. You may be eating 100 calories extra at every meal.
Your TDEE is probably anywhere from 1700-1900. If you only watch what you eat 5 days a week and don't weigh anything, it's highly likely you're just overeating.0 -
I do weigh what I cook at home. I only use hot sauce or ketchup for condiments and I don't count them. I estimate (rounding up my calories) based on the weight of food, MFP, the packaging label. I always try to leave 150-200 cals room for error, and only count half of my exercise calories. I'm pretty sure I'm not overeating.
Also, I said that was what I eat most days. I track my calories all days. On weekends I may eat out but I still stay within my caloric goals0
