So much broccoli and no clue how to use it

Hey everyone, so recently my boyfriend bought an overload of broccoli ....it was on sale and i think he was trying to be nice about my healthy dieting. Now i have no clue how to cook it....im used to steaming and boiling but both options have gotten incredibly boring! Are their any ways i could cook it or make something simple with it?

    You can roast it or put it in salad. Or just eat it with dip like you would carrots or chips. Soup is good, too. Also, whir it in the blender with eggs and make an omelet or souffle. It's also good in a quiche or a frittata. Oh, and you could stir fry it with meat and brown sauce like the Chinese take-out.

    Or. you could do what I do on occasion, which is wait until it turns yellow and quietly sneak it into the trash.

    I also cut up,mix with olive oil, salt and pepper and sometimes red pepper flakes, and garlic. Put in the oven until gets soft and light brown.
    Another one is a low calorie broccoli soup. Tons on Pinterest.. Good luck

    My two favorites are raw mixed in with a lot of other goodies in a salad and steamed which you've already covered. You can also just snack on broccoli and dip it into an assortment of things.

    I made a salad with fresh broccoli, finely diced sweet onion, feta cheese, olive oil, and red wine vinegar. S&P, too, of course. Refrigerate overnight so the vinegar can just slightly soften the broccoli. Yum, yum.

    I usually just steam it and kinda force it down alongside yummier things like fish and potatoes heh

    Heidi do you have a good sauce recipe for stir fry? I typically use ground turkey, or thick sliced deli turkey, sometimes venison, but it's awful dry when i use venison.
    I've used packet sauce in the past but I know it's not super good for you so it's been a while since I've had it.

    I'm pretty sure smothering it in cheese with macaroni and baking it in the oven is the only clear option.

    I grow it and it's in overload right now.

    if you really have too much, cut into bite size pieces and toss into boiling water for 60 seconds. plunge into ice water and drain well. bag it and freeze. I have lots of recipes that use broc so i freeze in 1 cup sizes and then do a few bags that will make enough for a side dish.

    roast it. Olive oil, sea salt, garlic. Put in the oven until it has a slight char on it. yum ola.
  • Blanch it and freeze it. Use what you can while it is still good. You can pretty much add broccoli to everything. If you chop it small enough on top of salads or tacos in burritos. I do not like lettuce so I use spinach and broccoli for that greenage. Great snack is to throw a serving in the microwave with a serving of shredded cheddar and 1/4 tsp badia seasoning. I crave cheese....so I figure if I am going to eat as much of it as I do I best add a super food to it. Heck you can make a broccoli salad like they sale in the deli at walmart with raisins and shredded carrots and a coleslaw tasting dressing?

    Broccoli soup. Boil in broth and then blend it till it's really fine. Do wait till it's somewhat cooled down, I melted my stick blender.

    I peel the stalks and shred them in a food processor, then mix the resulting broccoli slaw with tuna, low-cal mayo, sriracha, lime juice, Thai basil, and fish sauce (or salt.)

    Cheddar broccoli soup? Delicious, and can be tweaked to be lower in calories than it usually is. :)

    I usually cut it up finely and then add a bit of sesame oil and organic stir fry seasoning. Pop it in the oven for a while until its nice and crispy, It goes lovely with crispy bacon bits if you wanna add something extra ;)

    there is never too much broccoli (at least in my kitchen)

    BTW broccoli on pizza is almost as good as eggplant on pizza
  • I just made a very easy soup with broccoli.

    Fill a pan, boil it.
    Drain a little water out so it's below the top of the veg.
    Blitz it with a hand blender until smooth.
    Crumble 100g of blue cheese into soup.
    Gently heat on hob and stir until cheese has melted in.

    Add salt/pepper to season and your done.

    I hate blue cheese but it's bangin in this soup. You can also add finely chopped onions, celery etc. Just experiment. :)

    If it's too thick for ya just add a little water.

  • Bake it in the oven with a little olive oil, garlic salt pepper and top with a little Parmesan cheese when it comes out. It is delicious.

    Buy the bag of frozen mandarin chicken from Trader Joe's. Cook the chicken as directed while you lightly steam the broccoli. Mix in the broccoli with the chicken (if you feel like you need extra sauce, a bottle of the Panda Express orange chicken sauce pairs very well). Serve over rice (I add a teeny bit of rice vinegar and a small sprinkle of salt and sugar to the water when I cook my rice) and topped with some sliced scallion and sesame seeds.
  • I love broccoli!

    You could lightly steam it, then have it with some sugar snap peas or similar with a soy sauce and garlic dressing type thing - it's really nice with pine or cashew nuts as a salad, but if you're allergic to them, obviously that won't work.

    I love it in a good stirfry - a mix of reduced salt soy sauce, lemon juice and a smidgen of oyster sauce is one of my go tos, with perhaps some garlic thrown in - really nice with some lean beef strips or chicken.

    Roasted broccoli is yummy too - again lemon juice is really good over it, goes really well with a plate of salmon.

    I am also lactose intolerant. Never stopped me! I just stay home so I can poop whenever I need to.
