So I finally found laughing cow cheese and I am in love with it! It is my new best friend. I read about it on here and now I want to know what you do with it. I just got it on the weekend and I have had it on crackers and on a sandwich. What else do you do? I am sure the ideas are endless, so please share them.

I spread it on sandwiches in lieu of cheese and mayo. My favorite so far is the french onion. Love it!

Mostly eat it with Kashi crackers. Love the stuff - particulary the garlic one.

I spread them on white cheddar rice cakes from Quaker, or those Wasa crisp breads. They are great on pretty much any type of cracker, too. I've used them as dip for baby carrots, I have even been known to throw a wedge in with my scrambled eggs. Delish! The list goes on and on. My favorites are the blue cheese and french onion. Yummmmmmm.

I have used it a lot to make a low fat, low calorie alfredo sauce to put over whole wheat pasta. It's a Hungry Girl recipe and is VERY tasty. Just cook it over low heat in a small pan or microwave it.

1/2 Wedge The Laughing Cow Light Cheese
1 teaspoon Fat Free Sour Cream
2 teaspoons Kraft Reduced Fat Parmesan Cheese
  • For those of us sensitive to Salt...if you are subject to High Blood Pressure...you may want to take a look at the sodium level in the Laughing Cow Cheese...really high.
  • I bought some a couple of days ago-- I got the Light Garlic & Herb and the Light Creamy Swiss, and I <3 them! I like to eat them with baby carrots :) 5 or 6 little carrots is the perfect amount of raw veggie to go with it, and those are only 25 calories, so the whole snack = 60 calories. Well, that is if my 3 year old doesn't steal a carrot with some of the cheese on it :)
  • You should try this healthier version of a quesadilla. It's really easy to make and it's cheesy and delicious! http://www.thelaughingcow.com/recipes/hey-mambo-veggie-italiano-quesadilla/
  • I make these really good breakfast sandwiches -

    Egg beaters (1/2 cup) - 60 cals
    Thomas whole wheat bagel thin
2 slices oscar mayer pre-cooked bacon
1 wedge garlic herb laughing cow.

    YUM.

3 scrambled egg whites and mix with one wedge of laughing cow cheese! It's awesome and really helps with the blandness of egg whites!

    Try these:

    1. Mix in with eggs

    2. Serve on celery

    3. In place of cream cheese in recipes
  • I steam some cauliflower, blend it up and mix a bit of the laughing cow in with it, tastes yummy and has the texture of mash potato. (I cant stand the texture of cauliflower for some reason lol)

On a sandwich instead of sliced cheese.

    Mixed in with scrambled eggs

    Smeared on an apple

My favorite is the Light Queso Fresco and Chipotle flavor

Twice baked potatoes - microwave small potato, cut in half, scoop out pulp and set aside. Mix cheese wedge with lite (or ff, your preference) sour cream, then mix that into reserved potato. Put potato mixture back in potato halves, put in oven until a little brown on top. Depending on whether I eat it as a meal or a side, I might add in broccoli, chopped chicken breast, etc.
