Just got back into the gym, trying to lose weight.

I'm a 5'7 female that currently weighs about 132 pounds. I want to try and get down to 120 or 125 with a relatively low body fat percentage. I've always eaten pretty healthy but just recently realized even though I was eating healthy I was eating around 1800-2000 calories a day without really working out. About a week ago I cut my calories to 1200 a day with 30 minutes of cardio every day. I'm now 132 pounds. I do realize this was probably all water weight,. Is what I'm doing however the right thing to do to get the results I'm going for? Any help would be appreciated!

No. At 5'7 and 132, you could stand to eat a little more than 1200 calories, and add in some strength training. It sounds like you want a slim, "toned" look....weight training and a more reasonable calorie deficit will help you achieve that. You want to try to retain as much lean body mass as possible, 1200 calories and tons of cardio will do the opposite.

You're already at a healthy weight, and 120 is barely in that range. If you want to lose, set your goal to no more than 1/2 a pound a week (more than 1200 calories) and add in heavy lifting so you retain muscle. Because you are towards the lower end of a healthy weight already, your focus should be more on re-composition than losing weight. Check out the lifting threads here and get thee to the weight room.
