Low Fat Kick’n Chicken Salad
Ingredients:
2 boneless, skinless chicken breasts (6-8 ounces each)
1 1/2 cups Hellman’s Light Mayonnaise
3 stalks celery, chopped
Weber Kick’n Chicken Seasoning
Salt
Pepper
Preparation:
Preheat oven to 325F.
Season both sides of chicken with Weber Kick’n Chicken Seasoning. Bake on a non-stick baking sheet at 325F for 20 minutes or until internal temperature reaches 160F. Place chicken in refrigerator and allow to cool.
After chicken has cooled remove from refrigerator and dice. Combine chicken, celery, and mayonnaise in a large bowl and stir. Add salt and pepper to taste. Serve.
