Cheap wheat/dairy free dinners

Hello everyone! Looking for some new inspiration for dinners, very happy with my salad lunches coz they're really easy to chop and change (literally?!)

Lets see who has some simple, cheap, wheat and dairy free suppers for me? :)

    How about eggplant parmesean, w/o parmesean? I made that today was really good. Although sorry the mozzarella is really good. I admire you for not doing dairy and sorry if you are allergic. Anyways, instead of bread crumbs, coat the eggplant in brown rice flour with maybe some sesame seeds or something that will give it a little more crunch then just the flour, just flour should be fine too. Instead of eggs to make it stick use olive oil, it worked, not as well as an egg but still gave it a fine crunchy layer. Then I made a pomodoro sauce with fresh tomatoes, garlic, and basil. If you want the recipe just email me. You can by the store bought marinara if you want too. Then you can top this all onto some Quinoa pasta. Well good luck, hope you get some more ideas. :) Sorry I'm not sure of cost, our eggplant was from our garden.

    one of my fav quick and easy meals is some beans (pinto/black etc) with chopped bellpepper, onion, some squash & zucchini or mushrooms, and maybe some spinach and all boiled and simmered together with cilantro and basil and also garlic! and your favourite salsa (most important imo) let it simmer for about 15 mins on low to absorb more flavours and maybe add a side of steamed broccoli. one of my favs anyway :)
