HELP! POTLUCK FRIDAY!

We are having a warm meal pot luck on Friday and i need something that I can actually eat.

Couple of girls are bring chili and the likes which would be yummy and all but are NOT calorie friendly!:noway:

Any ideas?:ohwell:

    We are having a pot luck Friday as well. My friend and I are making slow cooker chicken fajitas. You just put boneless skinless chicken breast in a crock pot and cover with a jar of salsa and chicken broth (enough to cover it). When its cooked you shred the chicken and mix in greek yogurt and some of the juice it cooked in. Eat with a whole wheat tortilla and low fat cheese. They are delish!

    We use to do that alot here at work, i mean anything we could celebrate with a pot luck/food day we would celebrate! LOL now we have food day ONLY for birthdays or holidays!!! But we've made them "healthy" themed. It helps we are all trying to lose weight! We usually do salad, sandwiches, Santa Fe Stew made with lean ground meat, etc. we no longer bring sodas, tea. We jus fin for ourselves with the beverages. We are all drinking water! We also would bring enough food to gorge on for the whole day (wayy more than we needed) Now we only bring just enough. Not enough for seconds, 3rds, etc. LOL OUr dept. LOVES TO EAT!!! LOL So we try & make it easier for all of us!!!

    The pasta primavera is really good ,as well as, the saucy pepper steak, 1-2-3 chili and the Mexican chicken casserole, and they won't break the bank! I use frozen pepper and onion blend in the saucy pepper steak, I use 2 bags to stretch it. This would be good w/ chicken as well or even pork. This would be good in a tortilla, too!

    My favorite go-to for a hot meal potluck is also a Hungry Girl recipe. I do the 3-Ingredient Shepherd's Pie. I just double the recipe and make it in a 9x13 pan instead of 8x8. It's warm, tasty and low-cal. I do add my fair share of seasoning and spices on top of her three basic ingredients, so have fun with it and make it your own in that way. (I.e. The hubby and I like spice a lot so I'll add cayenne along with onion powder and garlic powder to the crumbles, some cajun seasoning to the veggies, etc)

    Also, it has the added bonus of actually being vegetarian, so it works in case there are any in your group.
