A friend just gave me some cucumbers from his garden so I'm wondering if anyone had any good recipes for them. Ty

    4 cucumbers, thinly sliced
    1 small white onion, thinly sliced
    1 cup white vinegar
    1/2 cup water
    3/4 cup white sugar
    1 tablespoon dried dill, or to taste

    Directions

    Toss together the cucumbers and onion in a large bowl. Combine the vinegar, water and sugar in a saucepan over medium-high heat. Bring to a boil, and pour over the cucumber and onions. Stir in dill, cover, and refrigerate until cold. This can also be eaten at room temperature, but be sure to allow the cucumbers to marinate for at least 1 hour.

    My cucumber salad

    3 cucumbers sliced thin........ Mandolin slicer

    One Vidalia Onion sliced thin

    4 large tomatoes sliced thin

    3Tb. raw honey
    2 Tb. Dried Italian spices.
    3/4 cup red wine or balsamic vinegar

    toss all the ingredients together and let sit for at least two hours in the refrigerator.

    I can eat this all day

    I'm used to having them plain - peel, cut into spears and sprinkle with salt and pepper. Sometimes we cut them into discs and put in a bowl with white vinegar for a little extra something.

    Cuke sandwiches are good - bread, mayo/miracle whip, cuke slices, salt and pepper. Enjoy!

    They are good if you peel them, slice them, then squeeze lemon juice on them, then add salt and pepper to taste.

    Peel them, slice them thinly, and add to pitcher of water. My favorite drink! (Add gin if you're not driving.)

    I made stir-fried cucumbers last night. With dried mushrooms, bit of scallion/green onion, garlic, bit of oil. Cook for 5 mins, then add a bit of soy sauce (I used lower sodium) and black vinegar, if you have it (from Asian grocery store). You can add chili if you want (I added a shake of hot chili flakes). Stolen from Fushia Dunlop's Every Grain of Rice.

    It was yummy and not at all what I expected. The cukes went sweet but stayed firm.

    Tangy Cucumber Salad (Light & Tasty)

    Ingredients:
    1 cup (8 ounces) fat-free sour cream
    2 tablespoons cider vinegar
    2 tablespoons lemon juice
    3/4 teaspoon salt
    1/8 teaspoon white pepper
    3 large cucumbers, peeled and thinly sliced
    1/2 cup thinly sliced sweet onion

    Directions:
    In a large bowl, combine the sour cream, vinegar, lemon juice, salt and pepper. Add cucumbers and onion; toss to coat. Cover and refrigerate for at least 1 hour. Serve with a slotted spoon.

    Also, you can add 1 medium chopped tomato. If too tart, add a teaspoon of your favorite sweetener.

    Nutrition Facts (as written/makes 6 servings):
    3/4 cup equals 68 calories, 6 mg cholesterol, 328 mg sodium, 13 g carbohydrate, 1 g fiber, 4 g protein.

    Also, I love eating fresh tuna salad on sliced cucumbers. If you need a tuna salad recipe, I have one posted in the recipe forum. :)

    I love cucumbers. One of my favorite things is chicken satay with cucumber relish:

    Prepare at least an hour before eating so it has time to marinate.

    Servings: 4

    Ingredients

    2/3 cup water
    2/3 cup white vinegar
    1/2 scant cup white sugar
    1/2 red onion
    1 English (seedless) cucumber
    1/4 tsp. red pepper flakes

    Directions

    In a small saucepan heat the sugar and water over medium-high heat until it just thickens. Add in the vinegar. Allow to cool. Toss in red pepper flakes. Cut the cucumber into thin, quartered pieces. Thinly slice the red onion either into rounds, or quarters, depending on your preference. Add into the thickened sauce. Chill in the refrigerator.

    I have also made this relish type salad with Vietnamese pork skewers:

    shred one carrot
    shred one cucumber
    mix in
    1/4 cup fresh lemon juice
    1/4 cup rice vinegar
    1 teaspoon minced garlic
    1 1/2 tablespoons fish sauce,
    1 sliced serrano chile
    2 tablespoons sugar

    stir until sugar dissolves, let sit about 15 mins.

    Seriously folks this is good!

    You could try to make your own pickles or maybe some tziki (spelling) sauce? Or you could make a snack of cucumber sandwiches. Rye bread with some cream cheese, dill and cucumbers.

    I love making cucumber water! So refreshing! Peel them, slice them thin and put in a pitcher with fresh water and keep in the refrigerator :)

    Gazpacho -cold vegetable soup with many variations. lots of cucumbers make it very cool and refreshing.

    Cucumbers, bell peppers, a little onion, all diced very fine in the food processor. Add a quart of tomato juice (unsalted, unflavored) diced tomatoes, salt and pepper to taste. Traditionally it is not spicy -hot, just a cool summer soup.. Many people add jalapenos or hot sauce.

    Also, peel, scoop out the seeds, and cube the cucumber and use instead of celery in any salads, tabouli, etc.

    i always just dice them and eat them in non fat greek yogurt. with dried mint on top as a side or dip...but i snack on them all the time because there so low cal and refreshing.

    tomato
    feta
    olive oil
    chopped cilantro
    red wine vinegar
    lemon juice
    chopped parsley
    olives if you want

    My son's girlfriend made us Cold Cucumber Soup the other night as an appetizer before dinner. I was very skeptical- oh my goodness it was so delicious! Especially since it's been so warm here, it was so refreshing.

    Drain 1 cup yogurt in a strainer/cheesecloth/coffee filter, then combine

    1 1/2 tbsp lemon juice
    1 tsp greek seasoning
    1/4 tsp oregano
    1/4 tsp rosemary
    1/4 cup fresh mint, chopped
    1/2 cucumber, peeled, chopped
    1/4 onion, diced

    I like a lot of mint, but you can add less if you'd like

    Tzatziki!

    Cucumbers mixed into greek yoghurt, with garlic, dill (or mint) and lemon juice to taste.

    For best results chop cucumbers, remove seedy part in the centre (I cut length ways first and use a small spoon to scoop) and sprinkle with salt, leave in a collinder for a while (at least 30 mins but a few hours is better) - this draws out a lot of the moisture. Pat dry with paper towel before use.

    Usually the cucumbers are peeled and cut finely so it is a sauce/dip, however I don't bother peeling mine and cut them into semi circle slices, so it's more of a yoghurty salad.

    Also, you can cut the cucumbers into sticks and dunk into the dip of your choice! (hummus for me!)
  • i lik it asian style. Sliced cucumbers, red onion, lite seasoned rice wine vinegar, a pinch of sugar and crushed red pepper flakes. it can be a side, or throw it on top of some spinach and top with grilled shrimp for a meal.
