Stuffed Peppers
Serves 5
Ingredients
Pepper - 5 Med/Lrg Green/Red/Yellow/Orange
Onions - 1/2 cup, finely chopped
Celery - 1 1/2 cups, finely chopped
Cooked Wild/Brown Rice - 1 cup
Lean Ground Beef - 1 1/2 cups
Tomato Soup - 1 can
Cream cheese - 3 Tbsp
Per Serving: Cal - 223 Carbs - 24g Fat - 7g Protein - 17g
Instructions
Cut tops off peppers, scoop out seeds.
Place in shallow baking dish.
Cook for 15 mins @ 350
(Stuffing)
Brown hamburger in skillet. Add spices of choice (I use seasoning salt, garlic powder, and worcestershire sauce).
Add onions/celery. Continue cooking till tender.
Add soup and cream cheese and cooked rice. Mix well.
Once Peppers have cooked for 15 mins, take out of oven and allow to cool. When cooled add the stuffing till the peppers are over flowing. Place back in oven (at 350) for 15 more minutes. If you have stuffing mix left over place on side of plate next to done prepared peppers and serve

I just finished making this dish and it is delicious!!! I used lean ground beef and a little mild italian sausage to spice it up a bit. I accidentally purchases the philadelphia cream cheese with onion and chives, but I used it any way and it tasted great! I tend to like almost anything cheesy, so this was right up my alley. In addition, the stuffing goes a long way, so can we say this dish will make great left overs! Thanks for sharing this recipe!!!0
