Sandwich alternatives?
I often don't have access to a fridge or microwave at work and end up bringing a sandwich for dinner many days. Honestly, I'm getting tired of bread and I want some alternatives. I've thought about making wraps or salads. Anyone else have something simple and easy to bring with me for a decent meal?

You could always swap the bread for rice and have a sort of rice salad instead. So if you have a cheese salad sandwich have the cheese and salad in a pile of rice instead. Or if you;ve got leftovers from the previous night's dinner eat that.

When I'm being lazy and don't feel like cooking, I'll have a can of Bumble Bee Tuna Sensations (drained) on 3 Wasa Crisps. You could put any sort of seasoned, shredded meat on them. Egg salad is also good on them.
Pasta salads would be another alternative. If you can bring a cooler bag, anything that needs refrigeration should stay cool enough to be safe.
If there's a coffee maker or some other way to get very hot water, you could also make oatmeal or instant soups once in awhile.0 -
My friend has MS and her medication has to stay refrigerated on its 12 hour journey. She gave me some special ice packs that stay frozen a much longer time than the kind you buy at a store. I use an insulated lunch bag and one of these ice packs. Yesterday my son used it. The lunch bag with icepack was in a hot car in the sun on a 90 degree day for 7 hours and the ice pack was still 80% solid. Maybe you can get a good ice pack and then you can take all sorts of things for lunch.0

Squash spaghetti with 1 can of tuna in water, 1 tomato 1 onion in cubes and 1 tablespoon of oil, tastes delicious i usually put some condiments like garlic pepper and 1 tablespoon of ketchup.
Chips with guacamole and mexican salsa.
Meat and vegetable soup: peppers all colors, mushrooms, onions, tomatoes, squash, meat or chicken in cubes, celery , carrots, I usually make this on Sundays and I eat this for 3 days tastes delicious.
Toast with avocado like butter and tomato in slices a pinch of salt an pepper delicious.
Shredder Chicken with avocado a pinch of salt and I eat this over crackers.0 -
Great ideas! Thank you! I do have an ice pack I can stick in my lunchbox so usually cold items are not a problem. It's mostly just things that need to be heated up that I can't have.0

Tortillas are a great alternative to bread, and they're available in many flavors now - sun-dried tomato, spinach, multi-grain, etc. You don't have to heat them either.0

I like to take those individual serving size containers of hummus with a lot of veggies and some multi-grain crackers.0

I love wraps. Tons of ideas.. My favorite is tortilla, roasted red pepper hummus, turkey breast and shredded lettuce and diced tomato. Roll up and enjoy. Do a search here and there was a post for wraps and so many wonderful ideas. Good luck..0
