I've been on a huge quinoa kick lately, and I thought I'd share a couple of my favorite recipes.

Chicken, pesto, and spinach quinoa:

I loved this one because, well, I love pesto. I kept the recipe the same, except I added roasted tomatoes into the mix, and it was wonderful! So much yummy protein, and you feel so full!

One-Pot Mexican Quinoa Bowl:

This one was probably my favorite, especially the leftovers because everything got to mariante together overnight. I added taco seasoning and some cumin into the pot while it was boiling, and definitely recommend making the guac cause it put it over the top. I topped it with the guac, lite mexican cheese, and some greek yogurt subbed for sour cream. I could eat this one for every meal!

Well, there ya go. I seriously can't get enough quinoa. I'm just mad at myself for not delving into it sooner.

    I love quinoa mixed with chopped cucumber, green onion, baby tomatoes, and chopped celery. Top it off with greek dressing, homemade or storebought, and add feta if you wish. This packs amazingly well on camping or car trips and tastes good at all temperatures and will withstand room temperature for a couple of days without going off.

    Sounds heavenly.

    I make quinoa tabbouleh (sp?) a lot. Just your standard tabbouleh recipe, but using quinoa instead of bulgur wheat.

    I make quinoa & add black beans, corn, avocado & salsa. Wrap it up in a whole wheat tortilla. Voila! Add a little plain or vanilla Greek yogurt as a sour cream substitute.

    My problem is that I'll still have a margarita (or 2) with it...

    Seriously the best ones I've ever had and they freeze so well. You can serve them like a traditional burger, or gourmet them up. I've done everything from topping them with shrimp and red peppers, to melting havarti over the bun, putting on hot sauce and then just doing lettuce and tomato.

    I ran out last week and I'm planning to make more soon.
