Lunch/Dinner Type Recipes Around 500 Cals a Serving?

I have a feeling I am going to be a little sick of my current 'main' choices for lunch and supper.
I currently usually make and have in my freezer for lunches and suppers
Chicken 'Casserole' (Mostly chicken, stuffing, corn, and mushroom/chicken soup)
Lasagna (cottage cheese kind)
Enchiladas (Chicken)

All of these come out to between 475-575 a fair sized serving. (usually 6-8 pieces from a 9X13 pan, or an entire full sized tortilla enchilada)

I'm looking for more recipes of things I can make and put in the freezer to reheat as I need. I would like each serving to be a decent size. Not half a cup for 500 cals, more like a nice big slice for 500 cals
I do have a crockpot as well.

I'm fairly picky eater so would love recipes that aren't too full of onions/tomatoes/mushrooms etc. or that the recipe is easy to substitute or cut out those things.

    You can cook anything you want in a crockpot!! Put veggies of some kind, starchier ones are better I think, on bottom chopped, then protein on top of that chicken, beef, pork, turkey, you name it! You can cover it with low cal dressings or just spices. Depending on what you choose to put in and how you wanna portion it, you can hit your 500cals a serving. You can also serve it with steamed veggies to stretch it out and keep yourself full.

    If you hover over "recipes" in the top menu bar, then look to the top of the far right column in the pop up box, you'll see "healthy recipes".
