Bran and Apple Sauce muffins
Small, but healthy muffins for breakfast or snacks without the use of sugar. 122 cal per muffin!
140g wholemeal plain flour
140g wheat bran
4 tsps baking powder
1 tsp ground cinnamon
1 tsp ground ginger
40g mixed seeds (I usually make my own combo with flax seed, linseed, sesame, pumpkin and sunflower seeds)
4g splenda granulated sweetener
128g bramely apple sauce
44ml groundnut or vegetable oil
2 large egg whites
112ml water
METHOD:
1. Preheat oven to 190 degrees Celsius.
2. Grease or line a muffin tray with small muffin cases.
3. In a large bowl, sift together and stir all dry ingredients, except the seeds.
4. In a separate bowl, lightly whisk together all the wet ingredients.
5. Mix the wet ingredients with the dry ingredients, mix in most of the seeds, keep some aside.
6. Divide the mixture among the 12 cases (or tray).
7. Sprinkle with the remaining seeds and bake for 15-20mins until springy to the touch and a skewer comes out clean.
