I am an unexperienced cook, and have been nervous to try things. I want to find some great healthy meals to make (the less ingredients the better! :P)

I love soups! My favorite right now is sweet potato and pumpkin soup with a few middle-eastern spices.
* Chop up a sweet potato (or a half, depending on size) and the same amount of pumpkin into pieces (approx 1 inch cubes)
* Chop or grate a little fresh ginger
* Heat a little cooking oil in a pot and add the ginger, a little ground cumin, a hint of cinnamon and a little ground cloves (or any spices you like, really)
* Add the pumpkin and sweet potato and stir for a minute or so
* Add a quart of boiling water and two bouillon cubes (chicken or veg) - or good stock, if you have it
Leave to simmer for about 15 minutes, until the vegetables are nice and soft. Blend it smooth in a blender or mixer. Put back in the pot, add just a little cream or half-and-half, and reheat. Salt and pepper to taste. Enjoy!0 -
Roasted chicken... Buy a chicken cut into quarters, rinse and pat dry, add teriyaki sauce and bake at 400 for an hour or until juices run clear.
Breaded tilapia... Take tilapia fillets and coat with Pam, then dip in bread drums or cracker meal,, heat a frying pan, add 1 tbsp of evoo let heat, then add fillets, cook 4 min on each side or until it flakes easily.
For veggies, roast in oven with a tiny bit vow and salt and pepper for 35 min at 400 or steam in microwave for 2-3 min in a dish covered in plastic wrap (or buy glad simply cook bags). - this works for asparagus and broccoli.0 -
i made some that was pretty dang good and only like 300 or so calories for a whole entire bowl!!!!!!
It has chicken, cumin, chicken bullion cubes, minced garlic, garlic flakes, and like a rosemary/garlic/ mix......black beans and kernal corn.......
i boiled the chicken.....then just started added those cubes and spices and veggies.....lol....the cumin gives it a mexican/chili kick0 -
allrecipes.com generally has good healthy recipes with few ingredients. The black bean burritos from there are a weekly staple in my house. 101cookbooks.com has an amazing mushroom casserole that is my absolute favorite. It is a bit time consuming to make but you can freeze some and have left overs for weeks. Stir-frys are among the easiest things to make, just grab your favorite veggies and saute in some wok (or any kind) of oil still squishy then add a bit of low-sodium soy sauce and serve over rice.

You can never go wrong with vegtable stir frys, with a little soya sauce. For protein add either egg or prawns. You can buy bags of ready made stir fry veg at most supermarkets, for ease and convenience.
I would also recommend making you own soups.
The main thing to do is have a go. Put recipies into the database until you get the reading you want and have a try.

Go to www.food.com, they have millions of recipes that you can search by your favorote foods. Then when you select a recipe it returns the nutritional values. I love it and use it all of the time!0

healthy stroganoff
1 lb. lean ground turkey
1 zucchini (or your favorite summer squash) diced into small pieces
1 yellow onion diced the same size as the zucchini
10 mushrooms diced
1 tsp. garlic salt
1 can healthy harvest cream of mushroom soup
1/2 c. fat free plain yogurt or fat free sour cream
3 c. cooked brown rice
Heat a large non stick skillet over medium high heat. Spray with canola cooking spray. Add meat, veggies and garlic salt. Saute til veggies are softened and meat is browned, breaking up large chunks as you go. Add soup, yogurt and salt and pepper to taste. Heat through and serve over brown rice. Makes 6 servings0 -
Here's a VERY easy vegetarian chili recipe!
1 can whole tomatoes (24-29 oz)
1 can tomato sauce (24-29 oz)
1 can corn, drained
1 can french style green beans, drained
2 cans kidney beans (15.5 oz size)
1 packet chili seasoning
Add all to a pot and heat up!0
