Looking for a healthy (like for real healthy, not "healthy") jambalaya recipe since I've been wanting to make some for a while now. Does anyone have a good recipe that has been tried, is healthy, and would mind sharing? Or paella? I know they are similar, just different seasonings used. Thanks!

Not being sarcastic or leading...but what isn't healthy about it as is? Meat, veggies, some fat, some carbs...seems fairly balanced?
But I'm also in for recipes. I've never made it myself so...interested.0 -
Some recipes use a boxed rice mix, which I'd rather not use because those are usually packed full of sodium.0

I agree, I personally think it's all "healtht" but whatever! I usually just take current recipes and modify for what I have or what I want to use.
Just google "skinny jambalaya" and you'll get tons of recipes:

Here's one that may work for you. Let me know if you use it, and how you like it.

A true Cajun Jambalaya takes about 3 hours to make and is fairly healthy. its mostly a bunch of veggies boiled down with some spices and chicken/sausage/ham then you add your convectional rice and let all that good stuff soak up into it.
This one is pretty decent, I would not use shrimp though, I would replace it with chicken. Use light sausage/ham. It is a pretty healthy dish.

It's fairly simple to make it on your own (without the pre seasoned boxed rice). It's pretty much just seasoning, rice, meat, and vegetables. I like tossing tomatoes (canned or fresh, depending on my mood and whether I want to cut fresh ones), onions, bell peppers, and celery in my mine. My mom likes it without the celery, but celery won't kill her. I generally use 1 lb smoked sausage and 1 lb of some other meat. Sometimes I make my mom's separately, as she likes hers with shrimp and I don't.
Cayenne pepper is pretty good to use in it. You can buy 'premade' spices for that jambalaya flavor, too. Pretty much, take whatever recipe you're looking at that calls for boxed rice... and replace the boxed rice with rice and seasoning.
Typically, mine goes something like this:
1-2 lbs meat of choice (depending on how many people I'm cooking for)
1-2 bell peppers
1/2 an onion
3 or so stalks celery
1 tomato or 1 can of tomatoes
rice (1/2-1 cup or so, uncooked)
Oil (for cooking the meat and vegetables)
Seasonings (cayenne, thyme, pepper, etc)0
