I make taco salad at least once a week. I cook a pound of ground lean turkey, add roasted green child peppers, onion, garlic, and taco seasoning. If I have it on hand I also add spinach.
Put a few ounces in a bowl with 1/4 cup of no fat refried beans, add tomatoes, and lettuce and salsa. Top it with two tostado shells.
