so i have a bunch of potatoes left over from the weekend, and i dont know what to do with them
i make some of the best mash potatoes but im burned out on those so how do you make them?>?

Dry roast, oven chips, wedges, so many different ways. Mmm.

. You can cuube the potatoes and boil them, when they are just about cooked, take them pout of the pot and place them oin a dry towel, when they reach room temp, put them into a freezer bag and save them for a later date.0

Cube, parboil, dry, toss with duck fat, high heat roast
Gnocchi, boil, rice, add flour, knead, roll out, boil
Any hash, dice, brown, add meat, veggies, eggs0 -

OP, I chop 1" big pieces or so, toss in a ziploc with grapeseed oil, garlic, pepper, salt, and whatever other spices you desire. Roast them about 30 min or until tender.0 -

Corned beef hash or homefries
Those are usually my go to's with excess potatoes.0 -
Back them. Poke with fork, 5 taters in microwave for 15 minutes.
Cut them up into 1" cubes, throw them in zip lock with olive oil and spices. Back at 400, turning every 10 minutes until done.0 -

I cut them up to potato wedge size, toss with a little oil, roast in the oven until brown and crispy and eat with malt vinegar and salt. YUM.0

Cut into wedges, toss with olive oil, plenty of garlic salt or seasoned salt and bake until crisp.
Cube, boil, then mash with with cottage cheese, salt, pepper, diced ham or crumbled bacon (or not), dump into casserole, top with paprika and broil until top is browned.
Shred, sprinkle with a little salt and lemon juice and freeze to use later for hash browns or potato pancakes or to add to soup.
Those crash potatoes from a prior post are awesome (it works best with small reds or yukon golds, in my opinion).0 -
Chop them up into little cubes, toss them with extra virgin olive oil, garlic, and fresh dill and pan fry until they start to turn crispy. Top with tzatziki and try to only eat one serving.0
