Going vegan, need some help!

I've wanted to go vegan for a while now, I was a vegetarian for quite a bit but I didn't do it properly and had low iron so it didn't work. I want to get it right this time around! Recipes, food suggestions, tips and tricks would be awesome!

Check out www.vegweb.com/vegan101 for advice on becoming vegan. They've also got a ton of recipes. Peta also maintains a list of mainstream products that are "accidentally" vegan, which is really helpful if you're looking at common household foods in your pantry that you already have that just happen to be vegan. One of my favorite snacks I used to make was potato poppers!
Ingredients
½ onion, chopped
½ cup mashed potatoes
1 cup cooked brown rice
1 Tbs tomato paste (or ketchup)
½ tsp salt
½ cup breadcrumbs
Preheat oven to 350°F
Saute onion in water.
Combine everything in a bowl. When thoroughly combined, roll into balls and bake until lightly browned (about 20 mins)
You could also throw in some hot peppers for some spice and crunch.0 -
Check out the books Vegan for Life and Vegan for Her, they are focused on proper nutrition. Be sure to include a fair amount of beans and lentils in your diet.
