Awesome recipe - wish I could make them just a bit crunchier though.

I have made something similar before and to help crisp them up you can sprinkle them with a little bit of salt to bring out the moisture (before breading). Let them sit for a little while and then use a paper towel to soak up the water that came out. HTH!0

The way to get them crispy is to put a grate on the cookie sheet so that there is room below the fries to crisp them from the bottom. I use the exact same recipe, but just put them on the grate and they turn out awesome. I use this same trick with anything that I want to make extra crispy without frying!0

I use the same recipe except I grate my zucchini (squeezing it with several paper towels to remove liquid) and either pan fry them or bake them. Yummy Zucchini fritters that make a great side dish to so many proteins.0

after googling and trying to find out what a baking grate it (LOL) I found a site saying you can put a cooling rack onto your cookie sheet and use that? Is this what everyone else does? I would never have thought a cooling rack would withstand the heat from the oven well - its so thin!0

Hello all,
I do the drying thing or if I am really lazy, I dip them in flour first (or almond flour to cut the carbs), then the egg, then the panko. The flour "dries" them a bit.0 -
mmm I love almond flour, I bet that tastes realllllly good. Almond flour is so awesome - I made an apple pie with it once and BOY did it taste FANTASTIC.0

Yeah, I totally use a cooling rack as the grate. Just spray it with some pam so they don't stick at all and it works really well and is cheaper and lazier than getting some other tool0

Sounds yummy.
When it says rotate fries, I hope that means flip them because that would help crisp them up...not 'rotate' them. I just tongs and take the time to turn each one. Yeah, I want my stuff evenly crisp.
My friend just gave me 3 huge zucchinis..so I want to make the homemade baked chips (not fries) with them. I am going to use both the zucchini and sweet potatoes. Hope they come out crispy! They sound so yummy!
I've had homemade potato chips from sweet potatoes and beets. They were great, but fried. Hoping they'll be great baked.
The recipe has been circulating on FB. But, we'll see. It is zucchini season!0 -
