Hey guys, I'm a 5'3'' vegetarian (who's also got an egg allergy) who'd appreciate different ideas for vegetarian meals! I'm looking for low-cal, high-protein meals or salad ideas, or essentially anything new I can try... I'm getting pretty tired of my usual meals

Hi! Fellow vegetarian here!
I am sure you would need to make your own pizza crust for this, but I just made a KILLER pizza last night. It was topped with carmelized onion, thinly sliced gala apple, and then a thin, even layer of gruyere cheese. I made the crust really thin. It was DELICIOUS. and also only about 150 calories for a huge slice...so I ate a couple. heh heh heh.
I also make these no-bake bites for snacks...except I was naughty and added dried cranberries to them. I have a peanut allergy, so I used sunbutter as well: http://www.gimmesomeoven.com/no-bake-energy-bites/
And I know mexican-esque food is a little overrated for vegetarians (As is Indian food...I feel like both are the only things people assume vegetarians eat, along with salad). but this was delish...especially because it is squash season and the markets are BLOWIN' UP with these things: http://www.mountainmamacooks.com/2013/07/taco-tuesday-grilled-summer-squash-tacos/
And lastly, with breakfast, I have been obsessed with fruit smoothies...and adding in 1/4 a cup of raw oats makes it taste like a muffin.0 -
Not a vegetarian, but I do love the meatless "burger" patties you find in the frozen meat aisle. I used to microwave them with a slice of American cheese, put some sugar-free ketchup on top, and then use one of the 100 calorie sandwich thins. Yum.0

Veggie and Bean chili/stews. Just get a bunch of different canned beans, drain/wash them. Dump in a slow cooker with some tomato sauce/paste, veggie broth, chopped carrots, potatoes, celery, peas, any veggie you like; add spices (ie. chili powder), salt/pepper and/or sugar and then cook on high for 2 hours or on low for 5-7 hours. Easy and simple. Eat with homemade cornbread. I'm gonna be having this for next week!0

@maddyk91: OMG thank you for so many recipes and yeah I've been on a fruit smoothie kick too! I never thought of putting oats in it though... I've gotta try that. And i'm actually Indian so yeah I get a lot of Indian food ;P

I'm a vegetarian, too, and one of my favorite meals that is higher in protein and vegetables is this from the NYT, Savory Cottage Cheese Pancakes. I omit their seeds and use curry powder instead, but only because I'm lazy.

In addition, my favorite vegetarian meals may be found on Smitten Kitchen's website. The author was a vegetarian for a decade, and includes many veggie meals on her site. Some really healthy, others more like comfort food.

Here's a quick squash casserole I like...
Courgettes et Tomates (zucchini & tomatoes)
5 ounces freshly grated zucchini (approx 1 cup)...one of those mini zucchinis is usually just about right
5 ounces fresh tomato, chopped (1 med tomato)
1/4 cup quinoa flakes
1 tablespoon freshly chopped thyme
2 tablespoons shredded parmesan cheese
1 tablespoon water
pinch crushed red pepper
pinch kosher or sea salt
In a microwave safe dish, combine all but the cheese. Sprinkle cheese on top. Microwave on high for 3-4 minutes until heated through and bubbly. If you don't use a microwave, bake in a preheated 400 degree oven for about 20 minutes. Makes 1 serving. Grated carrot is good in this too.
Calories - 194
Sodium - 280 mg
Total Fat - 4.8 g

Citrus Coconut Roasted Beets
- 1 bunch of Beets, cleaned, peeled and chopped into quarters
- 1 tablespoon fresh Orange Juice
- 1 tablespoon melted Unrefined Coconut Oil
- a few pinches of fine Sea Salt
- Orange Zest
- Optional - a splash of nutty oil (Walnut, Hazelnut, Pistachio or more Coconut Oil) to finish
Pre heat oven to 400 degrees F with the rack in the middle.
Toss beets with oil, orange juice and sea salt. Arrange in a single layer on a rimmed baking sheet or casserole dish. Roast 20 minutes and flip beets over so they roast evenly. Roast an additional 20-25 minutes until beets are tender. Garnish with some orange zest before serving. Makes about 8 servings.
Notes: Roast a few bunches of beets at a time. They last a while in the fridge. Add enough oil and orange juice so they are glistening.

someone posted a recipe for a black bean burger with spicy mayo the other day... looked amazing. Use the search bar and search for it, there are always good recipes being posted0

1. In a bowl, mix the beans with the red chilli, pepper, coriander leaves and spring onions. Season and spread evenly over 2 soft flour tortillas. Top each with a handful of grated Cheddar and sandwich a second tortilla on top.
2. Heat a large non-stick pan, lightly greased with olive oil, over a medium-high heat. Carefully fry each quesadilla, 1 at a time, for about 1½ minutes each side, until they are golden and the filling is hot (invert onto a plate to turn them over).
3. Cut into wedges and serve with fresh guacamole, for dipping.

veggie burgers are my favorite (i refer the gardein brand) they're 'chicken' strips are good too, and they're both high in protein.
chickpea salad sandwich is like a mock chicken salad sandwich, and it's really good. basically mash chickpeas up with mayo, mustard, spices n chopped veggies like celery/cucumbers0 -
