Broccoli & Cheese topping

2 cups cooked chopped broccoli
1 cup mayonnaise
1 cup shredded cheddar cheese
4 hot baked potatoes

In small bowl combine broccoli mayonnaise and cheese spoon over hot potatoes Use the microwave oven to bake the potatoes

    Mayo and cheese plus whatever else is actually a delicious combination. It's one of the main reasons I got to 370 lbs, but it tastes good! Haha! :) Mayo, cheese, and onion; and mayo, cheese, and tuna are both awesome.

    I can't eat them any more, ever, because I can't do mayo "in moderation". >.<

    I think it sounds good. It can also be tweaked to meet dietary needs too. Some people just seem to have tunnel version, see something they dislike and dismiss it without further thought. If someone doesn't like mayo they can use Greek yogurt. If someone doesn't like cheddar, there's a bunch of other cheese varieties to choose from. Thanks for the recipe Jim :)

    I often get inspired by recipe ideas and cooking tips. I usually wind up tweeking something here and there, but the idea gets me thinking. Potato, cheese (a 1/4 cup is fine, or just use less) and broccoli is a great combo, and Greek yogurt would be a great swap out for the mayo. I've done something similar with potato, cheese (I've used different kinds of cheeses like cheddar, parmasean, cottage cheese, ricotta, etc.), broccoli and salsa, and twice baked potatoes with cheese and broccoli.
  • 25g butter
    25g plain flour
    400ml semi-skimmed milk
    1 tsp Dijon mustard
    150g low-fat soft cheese
    450g purple sprouting broccoli, trimmed
    4 sun-dried tomatoes, finely chopped
    25g fresh white breadcrumbs
    1 tbsp olive oil
    15g Parmesan cheese, grated
    25g ground almonds
    25g flaked almonds
    Method
    Preheat the oven to 200°C/400°F/Gas 6.
    Melt the butter in a pan and stir in the flour, gradually add the milk and cook, stirring continuously, until you have a smooth sauce. Beat in the mustard and soft cheese.
