Recipes that produce good leftovers

Our schedules are crazy and in order to work in gym time in the evening, I typically cook several meals on Sunday for us to eat during the week. I try to pick things that are tasty reheated and aren't tough or dry (chicken cordon blu, turkey peppers, chili, etc) but we are getting sick of eating the same stuff day in and day out.
Does anyone else cook ahead? If so, please share your favorite go to recipe.

Soups make great leftovers that can also be really low in cal if you want. My favorite leftover food is probably lasanga, really easy to make a lot, and tastes great re-heated! I also like to make salads with bulgur, doesn't even have to be re-heated.0

Shepard's pie reheats nicely. I make mine with ground turkey and lots of veg then a thin layer of mashed potato on top.0

Chicken kabobs.
We just grilled up a bunch off lemon garlic chicken kabobs
Cut up red, yellow and orange peppers into cubes
Cut up two Vidalia onions onto pieces that will go on the skewer, we separate the layers
Cut up chicken breast halves into six pieces each
Marinade
Juice of four lemons
Four chopped garlic cloves
1/4 cup olive oil
Place in blender and process til well blended
Pour marinade over the cubed chicken and let sit 30 minutes.
Build the kabobs and grill til done. These keep very well in the fridge.0 -

Casseroles, chili, stew, soups are all good.
For cold meals, there are salads: bean (kidney, black, white, etc...any mix), edamame, wax & green bean, pasta (less noodles, more veggies), etc.0 -
whenever I cook I try to make at least enough for a lunch or two... mostly chicken, beef, pork or salmon as the main - plus two sides of veggies... Crockpots are fun too!!0

I'm very pro-crockpot! Crock meals always reheat well. I've frozen leftover soup, casserole and chili for the following week (sometimes there's just way too much and my fam won't do leftovers more than once! Ha!)
A few of my favorites:
Chicken tortilla soup
Chili
White chicken chili
BBQ pulled pork
Chicken and sweet potatoes
Roast beef (aka pot roast)

500g beaf mince
1 can diced tomatoes
1 can mixed beans
as much veg as you like
i usually add, spinach, celery, carrot, peas, corn and mushrooms
couple splashes of worstershire or soy
3 big squeezes of low sodium tomato sauce or tomato paste depending on how strong you want it
1 beef cube
big sprinkling of italian herbs
garlic
sweet chilli to taste
Makes me about 6-8 big serves
200-300 calories depending on how much of the sauces you put in
keeps really well for ages in the freezer.0
