Batch cooking + freezing it
Hi everyone,
I am looking for some meal recipes that I can freeze. I do rice and vegetables and freeze them in individual bags but I am looking for something different?
Please share your recipes that freeze well! I am looking for both vegetarian and non vegetarian recipes. I, myself am vegetarian however my partner is not and we have a very hard time choosing what to eat. He eats a lot of take aways and I would like to persuade him to eat more cooked meals, however he always says " I am too tired and can't cook/can't wait for you to cook" So for such occasions I would like to have something freezed I can just put in the microwave and eat.

My favorite go-to is the site www.veganinthefreezer.com I really like her recipes and they are all set up to be frozen and reheated. They aren't designed to be "low-fat" or anything. But, honestly, they aren't bad in the calorie department and if I need to, I just swap out an ingredient or two to 'fix it."0

My favorite: Just made it over the weekend and froze some, am eating some. It's vegetarian (vegan) but you can add sour cream or yoghurt when you serve it; also can cut some sausage into it for your mate if he has to have meat. But I know plenty of meat eaters who like it just as is.

Chili, spaghetti sauce (which you can use in a lot of different ways besides just with pasta), curries, stuffed peppers, and stews freeze well in my experience. My freezers are pretty full right now, but once I empty them a bit, I'm going to make a double batch of these: http://www.thegardengrazer.com/2012/06/quinoa-fajita-burritos.html I was sad when the last batch was gone because they were so good!0

BBQ pulled pork freezes very well - there are a lot of crock pot recipes for it. Also, grilled chicken breasts freeze well and when you take them out they can be added to anything from salads to quesadillas.0

I'm ALL about batch cooking and freezing it... I have food in the freezer for the next 2 weeks! Heres a few in my freezer now:
*Slow Cooker Taco Chicken Bowls--- Seriously a staple in my diet!

^^ you could probably substitute the meat in this one for different kinds of beans-- I like to do blackbeans and kidney beans.
**My lasagna recipe- Last time, I substituted the noodles for Zucchini and used ground turkey. I cooked everything (stove top) and put them together and just put them in the freezer. Now, I just have to let them defrost and pop them in the oven.
Lasagna
2lbs Ground Beef
1 Large Onion
1 Bell Pepper
1 Large can Diced Tomatoes
1 can rotel(drained)
1 can tomato sauce
1 can tomato paste
Garlic powder
Onion Powder
Italian Seasoning
Salt
Pepper
Tonys
Bay Leaf
Lasagna Noodles
Mozzarella and Cheddar Cheese
Brown 2 lb ground beef, drain
Sauté 1 large onion and 1 bell pepper.
Return beef to pot
Add: 1 large can diced tomatoes. 1 can rotel drained, 1 can sauce, 1 small can paste.
Season with garlic powder. Onion powder. Italian seasoning. Salt. Pepper. Tonys. Bay leaf.
Bring to boil (watch it or it will stick) reduce heat to low and Cook 1 to 2 hours.
Layer sauce noodles cheese and bake 30 minutes.
I use mozzarella and cheddar.

I made a Black Bean Enchilada Casserole, you just layer beans, enchilada sauce, cheese and corn tortillas (has to be corn, flour doesn't cut as easily after baked and try not to overlap), then you bake at 350 for 30 min and you can freeze and reheat and it does really well.0

A lot of the meals I already make have been mentioned here but I would also add:
Calzones - you can make these with different fillings for you and your partner
Enchiladas - I make chicken enchiladas but have also made vegetarian enchiladas with black beans, zucchini, and squash.
I also will buy a large family pack of ground beef, or multiple packages of ground turkey, and fry it all up at once then freeze it in 1 lb portions in ziplock bags. That way I have them ready to go for chili, spaghetti, tacos, etc.
I also make salsa chicken in the crockpot and that can become filling for pretty much anything - salads, tortilla soup, enchiladas, rice bowls, etc.0 -
I make & freeze meatballs. Started with ground turkey & ground beef. Now I use all turkey & no one has noticed.I freeze on a cookie sheet,then pop into zip lock bags.Great for spaghetti,subs,in a cream or barbecue sauce over baked/mashed potatoes,brown rice,zucchini noodles or pasta.
