Chicken Tottilla Salad

1/2 cup 2 ounces shredded cheddar cheese
1 can 15 1/2 oz kidney beans rinsed drained
1 1/2 cups Ranch Dressing
2 cups corn chips crushed
6 cups shredded iceberg lettuce or Romaine lettuce
1 can 2 1/4 oz sliced black olives drained
2 cups cooked chicken diced
2 small tomatoes stemmed seeded chopped


in a large bowl combine lettuce chips chicken beans and cheese with the dressing and toss until well coated serve garnished with tomatoes and olives 220....per 1 1/4 cup...........6 servings

    Sounds yummy! I recently discovered a substitute for tortilla chips or "something" crunchy in a meal like this. Wonton wrappers. Slice into strips, spray w/ nonstick & bake until crisp.

    Each wrapper is something like 20 calories, so you could have nearly a cup of strips for approx 40 calories!

    Is this using low fat cheese and low or non fat Ranch dressing? And is this reduces fat/calorie tortilla chips? Just asking because the calories don't seem like they can be right unless you are, but it didn't say so in the ingredient list... Here is a great recipe for a very low calorie Ranch dressing.
