Getting it down

Ron Swanson is my spirit animal. If I could eat all the bacon and all the eggs, I would. And while following IIFYM has allowed me a bit more leniency, I will be the first to say I am bad at getting down anything that resembles spinach/lettuce/kale/cucumbers/green beans/edamame/asparagus/broccoli/celery/cauliflower/eggplant/artichokes.

So, how do you veggie haters do it? How do you get yourself to eat more plant based foods?

    My husband could relate. So far on the list of veggies he'll eat: peas, carrots if cooked with meat, potatoes, and onion if it's chopped up really really fine.

    I do have a few sneaky recipes like tomato basil soup that's got roasted red peppers blended up in it, or lemon zucchini bread. But for the most part he takes a multivitamin and hopes for the best.

    Sometimes I love things cooked but hate them raw (broccoli). Sometimes I hate things cooked but love them raw (carrots). I cannot stand swiss chard but my husband sauteed it with red onion and olive oil in a cast iron pan over the grill this summer and it was to die for. Just keep tasting different preparations and you'll find something you like. Also, tastes really do change as we age.

    I can only eat salads if i disguise them like buffalo chicken with ranch dressing or steak tips with country french dressing. Or just stick with whatever veggies you do like.

    There's a lot of variety among veggies. Some you will like, others you won't and how you cook them affects that, too. You'll only know if you try. You may decide there's a whole class of veggies you don't like. That's okay. I don't like bitter greens. There are plenty of other veggies to try and like.

    Most veggies taste lousy if you boil them to death -- and their canned versions tend to be boiled to death and over salted.

    Most veggies are good sauteed with some combo of olive oil or butter with a choice of onions, garlic, herbs, spices. etc. Grating a little good parmesan on top is a bonus.

    Many veggies are good roasted -- either plain or tossed in oil and a dried herb mix or a bottled Italian dressing.

    Lots of hard veggies like beets, butternut squash, sweet potato, etc., are good roasted whole wrapped in foil. Their skin just sloughs off when they are done.

    Veggies are great in stir fries.

    That's my husband too... He says he has "been tested and it's confirmed that he is a "super-taster""... He just BARELY started to eat spinach... which is a huge step up from Iceberg.... I'm kinda proud of him there... But he won't eat hardly any vegetables at all...

    Oh, here's another hint: Don't relegate veggies to a separate pile on the plate, side dish or salad. Incorporate them into whatever you are making to sneak them by you. Consider stir fries, pasta primavera, omelets laden with veggies, frittatas, etc.

    Last night, for instance, I wanted real comfort food for my stuffed-up-cold. We had macaroni with cheese with sausage -- not to mention the red bell pepper and half a bag of spinach chopped up in it -- which is relatively few veggies in such a pan for us. It tasted like macaroni, cheddar and sausage while the veggies slipped by unnoticed while they added volume to those darn measured 56g servings of pasta.

    Except for potato's, corn, peas I never liked them either but I've found a way to handle a good amount of greens, including spinach. I stir fry them up into something like ground beef or chicken pieces, with a good amount of butter. I tear up all the greens, add in some peas and carrots, and once the beef is done I thrown in all the veggies to simmer with the beef juices. I never even taste those veggies. :)

    I used to be a strict meat and potatoes kind of guy. I liked a lot of veggies when I was a kid, and then adulthood hit, and my mindset went from, "Cucumbers are good with vinegar", to, "Why waste valuable gut space with veggies when I could have another <rib/steak/whatever savory meat thing there was>".

    I do almost all of the cooking for myself. I've learned to make some decent stirfries with all kinds of veggies, and the love of grilled veggies sprinkled liberally with olive oil, garlic, coarse salt, and some herbs. The trick is to sauce them up, or spice them up so the flavor is enhanced and complimented quite well.

    One thing that worked for my husband who I met as a "vegetarian" who appeared to hate every vegetable in existence..."wha?" was to only let him try a new veggie when it was the best of it's kind.

    It went like this. Get taken out to the best restaurants while dating, demand the highest quality places while you haven't put out yet and still have the leverage. Order ALL THE FOODS that are veggie or fruit related, as appetizer AND salad AND vegetarian entree AND sides AND dessert.

    Eat them. When you strike on any one that you know is a VERY well prepared member of it's species GIVE HIM A TASTE. (of the veggie, not the date target).

    You can't imagine how many vegetables he claimed to hate because he had only seen, tried or smelled overcooked, overheated, overseasoned versions of it.

    He proceeded to become an actual vegetarian who actually ate actual vegetables and then went normal and then went Paleo. I can't keep up, but point is his diet is highly more varied now. Hope this helps!

    I get onions and tomatoes on my subs. I'll have a can of green beans with dinner here and there.

    That's about it.

    Green peppers are sent straight from hell to vex the days of man.

    Green peppers confuse me? They are like the bad boy of veggies.

    Sometimes they are like the devil, get them as far away from my sub sandwich as possible:sick: , other times I am like :love: :heart: :smooched: love love love can't get enough of these as the base of my feta and olives and italian dressing salad?...

    My feeling is that I take a multi vitamin for whatever is so important in vegetables.

  • You would be amazed at how putting spaghetti sauce with any of that would hide the taste of them!!!!! Look at the labels and get a low sugar choice that you like. My favorite is the Ragu garden selection which also has vegetables hidden in it
