Fantastic Potatoes!!
I made some potatoes that I saw on Rachel Ray. They are fantastic-just had to share
Use a deep skillet that is large enough to lay all the potatoes touching the bottom.
It must also have a tight lid.
I used red potatoes-she used gold-
In skillet add a couple of tablespoons of olive oil and butter-(I used I cannot believe it not butter lite)
Put in your potatoes and add salt and pepper and low sodium-99% fat free chicken broth.
Chicken broth should go 1/2 way up the potatoes. Put on lid and let cook for about 15 min over med low heat-turn potatoes and repeat.
Remove lid-take a can and press down on the potatoes just enough to break them open.
Turn the heat up to med-high and leave off the lid.
You want to cook out the broth. When the broth is evaporated, the oil and butter will brown the potatoes.
When liquid is gone let cook for about 3 min and flip and repeat.
Remove and sprinkle with fresh chives if you want.
I like my potatoes crispy, so I cooked for about 7 minutes on each side after the broth evaporated.
They are so good.

Potatoes are very good for you. If you eat them in moderation and without all the toppings. Eating a potato lunch is great. Cutting out your carbs and starches after 5 pm is key.

Hey did you all know that 2008 is the "International Year of the Potato". As Icandoit says, they are an excellent food...it's what we add to them and how we cook them that makes the difference. They are extremely high in fiber, vitamin c, d, and potassium as well as other vitamins and minerals...and for those of you who are concerned with such things, they are THE most productive and nutritious food for the amount of soil and energy used on the planet. Sounds Great! My husband is an EXTREMELY pickey eater and he loves potatoes so this may work for a low calorie dish for the whole family. Did you figure up the calories for this dish?0

I put down 175 calories for one potato. I took the calories from a red potato and added 50. I will sit down and figure it out today. It is really hard to tell. I cooked 15 potatoes, using 1 can 98% fat free chicken broth and 2 tblsp cant believe its not butter light
Chicken broth can is 20 calories and the butter is 100 calories-Olive oil has ? calories. I used up the bottle and tossed it.
So I am figuring that the whole pot without calculating the potatoes is 120 less the olive oil.

Have you ever tried mashed cauliflower instead of potaotes? I put cloves of garlic when I steam the califlower then mash them with a little low fat chicken broth and a tbs. of I cant believe its not butter.0 -

Does it taste like cauliflower or can it be disguised easily?? I wanted to try it out on my husband, but he's such a picky eater. I was hoping I could trick him and tell him what it was AFTER he finished it. :laugh:0 -
Ive had mock potato soup made with cauliflower and its superb! Delicious with some shredded cheese and bacon or ham!0
