Help! I think it's pretty good for you (except sodium) but I need some estimates.
Clear Beef broth
Rice noodles
Veggies, mostly cabbage and bok choy, w broccoli
1 deck-of-cards sized piece of tofu
peppers, spices, etc.

According to my research:
1/4 cube of raw, firm tofu = 117 cals
1 cup of canned beef broth = 171cals
1 cup of cooked rice noodles = 192 cals
1/2 cooked broccoli with no salt added = 27 cals
1 cup of cabbage = 21 cals
So I guess you're doing pretty well. The soup I make uses 1 gallon of water, 3 veggie boullion cubes, 3 cups of cabbage, 15 or fewer baby carrots, one onion, 3 or 4 stalks of celery, and a ton of powdered ginger. The entire humongous pot is just a little under 200 calories. It's amazing. I just have to tell everyone about it0 -
Are you making it yourself??? Pho is generally pretty high if from a restaurant because of the broth process. I love pho! love it!0
