What's for breakfast?

I believe breakfast is the most important meal of the day, how bout you? What do you eat for breakfast?

    My favorite breakfast is a spinach egg scramble. Cook chopped bell peppers, onions and fresh baby spinach in skillet sprayed with a shot of oil. (Pam olive oil). Add two beaten eggs. Stir until eggs are cooked. Plate and top with shredded and salsa. Calories: 256; Carbs: 6, Sodium: 443; Fat: 14; Protein: 21; Fiber: 1.

    Add bacon and/or fruit. I use the frozen mix of bell peppers and onions for convenience. Sometimes I layer the egg mixture and the shredded cheese in a bowl and top with salsa. Sometime I layer a little cream cheese instead of using shredded cheese - an add some avocado. Sometimes I mix ground flaxseed or chia seeds to add some fiber. If I don't have fresh spinach - I grab whatever veggies I do have. Other salad greens, broccoli. I like my green eggs!:smile:

    The spinach egg scramble is pretty quick and easy to make. But - if I don't feel like cooking.... I keep those precooked Jimmy Dean maple turkey sausage patties. (40 seconds in microwave) I also keep hard boiled eggs. So I place 2 heated sausage patties on a plate. Place 1/2 American cheese slice on top of each patty. Slice the hard boiled egg. Add fruit and call it breakfast.
  • Favorite breakfast is to make a smoothie with my nutribullet. Greek yogurt or half an avocado, blueberries and strawberries, chia seeds or hemp seeds, Whey protein powder, kale or spinach, and 4 ice cubes plus some water. It keeps me full until lunch

    I usually start with a glass of lemon water (juice from 1/2 lemon, 8 oz of warm water) through a straw and do not eat anything for 15 minutes after. Then a monomeal of fruit allows for proper digestion and an energy kickstart.

    On weekends, I love making eggs different ways. I like scrambled with salsa. I also loooove avocado stuffed deviled eggs - let me know if you want the recipe. Also, ezekiel bread with slices of tomato and avocado seasoned with lemon, salt, pepper, and cilantro is fantastic.

    I love a good green smoothie during the week/when I'm short on time. I have a Ninja Prep Pro and it's awesome.

    3c spinach
    1 - 1.5 cup frozen fruit (target has a nice antioxidant blend)
    1 c minute maid 15 cal juice (or water)
    15-30g protein powder
    1-2 tbs benefiber
    1/2c rainbow sherbet (not the healthiest choice, I know, but it taste so good)


    And on the weekend when I'm feeling indulgent a nice breakfast sandwich:

    2-3 pieces of bacon
    2 slices of wheat bread
    1 egg
    butter/oil/margarine of choice
    strawberry jam
