I have yet to find the BEST recipe. I'm picky - recipes with bananas tend to come out way too mushy and wet, recipes without any type of flour or grain (e.g. oat flour) tend to burn on the outside and not cook well inside, egg + pp just seems like a chocolate/vanilla/etc omelet lol.
So far this is the best recipe I've tried:

I don't drink coffee though so I omit the coffee and use water or tea instead. Also add cinnamon usually. I also made the cream filling with yogurt instead, but I have cottage cheese now on hand so I might try it with the cheese instead.
They come out quite good. I think the added oat flour is needed (or any flour) for the pancakes honestly.0 -

Also I only use 2-4ml EVOO. Overall doesn't add much to the fat/calorie content. Use a brush to spread it better over the pan.

They are seriously delicious. I include fruit as they can be a bit dry without. It makes 5-6 pancakes (the 5 inch kind) for about 350 calories, depending on your protein powder, and it's about 45g of protein.0 -

That one's good. Add some cinnamon, nutmeg, etc.
Be sure to cook them in a good non-stick - no fat needed. Also, cook them on low-med heat, and do it for much longer than a normal pancake. Probably 2-3 times as long. If the top doesn't look dry, don't flip the pancake. That's the way to make sure these suckers are cooked thoroughly and not gummy even at the very center.
ETA: I usually cook one recipe as one giant pancake, and eat the whole thing. It comes out perfectly. Very filling, serve with a drizzle of maple syrup.0 -

How is 14g of protein 'high protein'? I'd try them though...0 -
1 cup egg whites
1 cup fat free cottage cheese
1 tsp vanilla extract
1 cup oats
1/4 tsp baking powder
optional: splenda, stevia, honey to taste
Place all ingredients in blender, in order, blending until smooth. Pour batter in 1/4 cup portions onto hot griddle covered in non-stick cooking spray. Flip pancakes when bubbles form on the surface.
I usually add cinnamon and nutmeg to my batter and use about 1 tsp of honey to sweeten. Each pancake comes to about 50 calories with 5 grams of protein. They freeze very well and the recipe can be adjusted to include fruit, etc.0
