Greek Spinach Veggie Burger

1/4 c olive oil
1 clove garlic, minced
1 tsp. dried oregano
1 tsp dried dill weed
1 cup herb seasoned stuffing mix
2 eggs lightly beaten
1 10 oz frozen spinach, thawed and drained
1/2 c feta cheese crumbled (2 oz)

In bowl combine oil, garlic, oregano, dill weed, and 1/4 tsp black pepper. Stir in stuffing mix to coat thoroughly. Stir in eggs, spinach and 1/2 c feta cheese, mix well. Shape into four 1/2 inch thick patties (I tend to make mine smaller as they are easier to handle / flip)

Grill on medium heat. Cook 3-4 minutes per side until brown.

Calories / serving depends on how large you make your patties. One batch tends to give me about 6-8 patties and I calculate them to be around 200 calories (give or take). Enjoy this meatless meal!
