Splenda Cranberry Sauce

12 oz cranberries
1 cup(s) SPLENDA® No Calorie Sweetener
1/4 tsp table salt
1 cup(s) water

Wash cranberries. Bring Splenda and water to a boil. Add salt and cranberries. Bring back to a boil, reduce heat to medium and simmer 10 minutes. Stir occasionally so the cranberries break up and release their pectin.

Refrigerate before serving.

Makes 2-1/4 cups
Each 1.5 ounce serving contains 23 calories, 7g carbs, 0 fat, 0 protein, 48g sodium,1g fiber

    This recipe doesn't make 2-1/4 cups. It only makes 13 ounces. I guess thats because Splenda doesn't have the volume of sugar. Sorry for the mistake.

    It's still good though, and the nutritional information is even better based on 13 1-ounce servings:
    21 calories; 6g carbs; 0 fat; 0 protein; 45g sodium; 1g fiber

    If you would like a twist to this.... use half OJ half water. Boil until the cranberries pop. Half mash the berries and let cool. Just before serving add a splash of Grand Marnier and stir.

    If you would like a lower cal you can add orange zest instead of OJ. Also good with some chopped pecans, walnuts or almonds.

    I just made this again tonight. I was lucky and found fresh cranberries at grocery store today. The batch I made in November kept in the refrigerator until it ran out last week.

    This is really a great recipe for diabetics. I like mine a little on the tart side so I only put in 3/4 cup of Splenda.

    Thanks for the variations MzBug--they sound delicious.
