I need to make a healthy and somewhat inexpensive lunch for a fundraiser on Monday.....any ideas out there? Thank you!

now you've got me wondering what kind of lunch a peep would consider healthy. sugar in the raw? almond paste? marzipan fruits and veggies?0 -

but really, maybe you can make pinwheel sandwiches? you could make different kinds with varied meats, cheeses, condiments, etc0 -
What kind of kitchen do you have to prepare this? How many helpers do you have in the kitchen.
Anything that you can cook in bulk in very large pots.
We cook Chili in two large pots for 50 people. Add some bread and sour cream. Cheap, popular and healthy. Goulash is another option.
For running conventions we make a variation of Bircher Muesli which is very healthy and energy rich (perfect after a long run). But I don't suppose that is what you are going for.0 -
Is this lunch for the helpers of the fundraiser or for people funding?
Make a sort of sandwich bar, where people can assemble their own sandwiches: Just provide cut veggies, cheese, meats, different breads and sauces and let people decide how they like it. Avoids the problem of everybody not liking at least one thing in the meal.0 -

Okay, so I like the sandwich idea and BBQ is good for most.....so I think I might do the buns that you buy in the freezer section and stuff with BBQ meat! Will recruit kids to help whether they want to or not LOL!0 -

Goulash is more a winter meal but works, it's elbow macaroni with a spaghetti sauce (you can use actual spaghetti sauce) typically hamburger some use ground sausage or both with onions, bell peppers and some add grated cheese and/or black olives both of which are optional.
pulled pork or even more budget friendly is pulled chicken, cook whole chicken off in a crockpot or throw away foil roaster pans, just add some water and cover with foil so they stay moist, don't want them to brown (google to find out how many to serve that many people, I think about a safe bet is 5 per bird so about 20 birds so go cheap about $60 again ask your store for a deal) you then cool the cooked chicken and pull it off the bone, pull the skin and fat off (it's all easy to do) and add BBQ sauce pretty simple! (ask your local grocery store bakery or bread bakery (if you have one) what kind of deal they can give you on small buns (go small)
A Vegetable soup would be nice, don't even add meat or again you can use chicken instead of beef and always a veggie tray keep it simple use broccoli, cauliflower, baby carrots and celery the offer a spinach dip (google a recipe) and a ranch dip...0 -
Chili. It is inexpensive (and for such a large quantity, dried beans will be economical AND delicious) and filling and low calorie.
Otherwise, I'd lean towards some other kind of soup.0 -
Pasta with tomato sauce, garden salad, fruit salad, garlic bread
Sandwich/salad bar where they customize their own0 -
All wonderful input everyone, thank you so much! A parent donated a bunch of pork today, so will use that for the protein. I'm thinking since everyone will be outside and it will be hot here in kona, I will do the BBQ sandwiches and cold veggies. Would like to do the soup, but will probably go with potato salad since it's cold and I can prepare everything in my own kitchen. I have access to a big kitchen, but there is only a small oven/stove. Will also do a fruit salad since the farmers market will be open. AWESOME! I have a plan now!!0
