Cheeseburger Cups

Good morning.... Always looking for recipes that are a little different. Kids love these, so wanted to share..

Ingredients

1 pound ground beef
1/2 cup ketchup
2 tablespoons brown sugar... I used 1
1 tablespoon prepared mustard
1-1/2 teaspoons Worcestershire sauce
1 tube (12 ounces) refrigerated buttermilk biscuits... Be sure to use a can with 10 count..
1/2 cup cubed cheese
I added dehydrated onion flakes also

Nutritional Facts
2 biscuit cups equals 440 calories, 16 g fat (7 g saturated fat), 78 mg cholesterol, 1,142 mg sodium, 45 g carbohydrate, trace fiber, 27 g protein.

Directions
In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the ketchup, brown sugar, mustard and Worcestershire sauce. Remove from the heat; set aside.
Press each biscuit onto the bottom and up the sides of a greased muffin cup. Spoon beef mixture into cups; top with cheese cubes. Bake at 400° for 14-16 minutes or until golden brown. Yield: 5 servings.

    I make something really similar on a much larger scale (using a pie crust rather than biscuits) and it is really, REALLY good. Even my picky kid eats it, and the calories are reasonable. Win!! I'll definitely be trying this one!

    I just plugged it into the recipe builder here (using only 15g of brown sugar as the OP mentioned, as well as 93% lean ground turkey and real cheese, not Velveeta) and it is not even close to 440 calories per serving so beware! :laugh:

    If you make it 5 servings like their recipe states, using the above modifications it comes out to 489 calories, 24g protein, 19g fat, 54g carbs, 0 fiber and 1174mg sodium per serving

    No no, I wasn't shooting the messenger at all! I had originally put "so Taste of Home is wrong" in my post but edited it out - guess I should've left it in ;). I guess my point was more along the lines of "don't take it as gospel, still plug in your numbers and changes into the recipe builder for accuracy's sake."

    Also I took "2 cups" to mean 2 biscuit cups (since most cans of biscuits come as 8 to a can) which would make 5 servings difficult!

    Pillsbury Grands! Jr Golden Homestyle Buttermilk Biscuits, 10 count, 12 oz...... This is what I used so doesn't make it difficult at all..

    I would use 95-96% lean ground beef, low fat cheese, and most likely brown sugar splenda if I did make this... I wonder if there is a more diet friendly biscuit dough as well? Lastly, I would only eat one "cup" along with a salad or some other veggies... Thank you for posting the recipe. It is great that we can all tweak it to fit within our own diet needs and/or wants. :)

    I think it is a great value brand that I saw, not sure but I do know they have a lighter one. Just make sure it has 10 not 8.. That's where the confusion was earlier and difference in the nutrition...

    Note that they didn't say what type of ground beef; 80%, 85%, 90%, 97%lean etc.
    I'm thinking to rerun it through the MFP recipe calculator with whatever % you normally use, just to be on the safe side.

    My son learned to make these at summer camp. They are way more delicious than they sound, and if a 10yo can make them, anyone can!

    Bonus for me: I get a break from cooking and the kids have something besides a pbj.

    Thanks my kids would really enjoy this!

    edited to add that my kids are 2 x 20yr olds and 1 x 16 yr old - so hard to keep them filled up lol
  • I do this same thing but I add Sloppy Joe sauce to my ground beef. My kiddos love it!!

    I used the MFP calculator to refigure it. With 93% lean ground beef, 1 Tbsp brown sugar, and Longhorn Colby cheese it came to (per 2 cup serving)

    calories: 346
    fat: 15g
    cholesterol: 26mg
    sodium: 923mg
    carbohydrate: 44g
    fiber: 0
    sugar: 14g
    protein: 10g
