Accidental Slow Cooker Chicken Tacos---SO GOOD!

So I decided to make a mexican chicken in my slow cooker. You take about 4 frozen chicken breasts and pour a whole jar Pace over the the chicken and cook. I decided to buy some fat free refried beans to serve with it and I came across the taco shells. For 3 shells, only 150 calories. So I decided to turn my supper into chicken tacos. I even used the juice from the slow cooker to stir in the beans. Put low fat cheese or sour cream and you have a low cal mexican cuisine. It was a hit! :glasses: :happy:

I make chicken tacos like this about once a week. Top with lettuce, tomatoes and salsa. Sometimes I don't even use the shells. Just take a big piece of lettuce and wrap the mixture in it. Bake some zuchini & yellow squash with a little taco seasoning on them as a side. One of my favorite meals. :bigsmile:0

So you mixed the re-fried beans in with the chicken and salsa? I just was checking because I need an easy recipe for the week and this sounds like a winner!0

No I made the beans as a side dish instead of rice. I just used some of the salsa juice from the slow cooker and mixed it in the beans to give it better flavor and a smoother consistency.
As far calories go, I used the recipe calculator for this and it is about 300 calories for 3 tacos but I also added sour cream.0 -

I cook it on low about 3-4 hours until the chicken is shredded and falling apart.0
