Ham, Spinach and Feta Muffins - 141 cals a pop

I needed a breakfast on the go, and I don't like sweet foods first thing. I found this recipe, just made a batch, they're delicious!

1 egg
1 cup water
2 cups self-raising flour
1/2 teaspoon salt
100 grams low-fat feta cheese, crumbled or cut into 1cm cubes
1 cup of finely chopped baby spinach
2/3 cup low-fat grated cheese
100g sliced ham

Chuck it all in a bowl, mix, and bake at 180 (360) until they're nice and brown on the bottom.

    have some in the oven right now, found that I needed more than 1 cup of water, the batter was WAY too thick, had to keep cutting it with additional drizzles of water!

    My batter was really thick too but I just went with it, they came out lovely and dense.

    Theyre cooling on the rack now! Look lovely. I sub'd ham for corn as I'm vegetarian. Added a little extra ricotta for flavour. Can't wait to try, having these for lunch with a bit of sweet chilli sauce! Thanks.

    Not sure what I like most about this recipe, the fact that it's low calories, or the fact that I know how good your baking tastes normally so I'm confident it will be amazing!!!! haha
