Help! What can I eat?

Hi,

I live in Scotland, I'm 28 years old, and have 40lbs to lose! MFP has given me 1600 net cals a day and I'm managing to eat about 1400. The problem is I'm really into exercise at the moment as I'm in training for Kilimanjaro climbing next July, and burning about 600- 1200cals on the days I'm training (or 300ish cals on the days I just go for a walk) ; leaving me 500- 1400cals short of what I should be eating. I eat breakfast (lots of fruits and soya yoghurt), lunch (homemade soups and more fruit), dinner (salads, stir-frys, curries, etc) and snack on yoghurts, fruit and portions of cooked meats, etc. I need to eat more, but I'm struggling to think of options which are easy, accessible and not to bad-carb heavy as I want to avoid bread, rice, pasta and potatoes although I do indulge if I've climbed at the weekend and burned over 1000 cals ! Any suggestions folks?

P.s. I like my vino and my vodka and have found myself drinking to add cals! Stressful job - no giving up the booze advice please! I know it's bad - not interested!

    Up your protein and your fat. Full-fat yogurt, hard-boiled eggs or cheese along with your soup at lunch, larger portion of a less lean cut of meat at dinner. Add more oils to your salads and stir-fries.

    How did you put weight on? It certainly wasn't just eating 1600 calories a day. Just eat what you used to just less of it

    On days you have high calorie burns from climbing why do you restrict carbs? Have you been advised to keep carbs low due to metabolic syndrome or diabetes? If not, you should probably rethink restricting carbs. Carbs are fuel.

    I would second the suggestion of nuts, and add avocado. Both are high calorie and very good for you.

    JUst keep on eating whole foods with nutrition. Potatos and pasta contain nutrition. I am constantly surprised at how much protein is in my spaghetti. POtatos contain vitamin c.

    And i don't think you are eating enough protein. calculate 0.8kg per kg of body weight.

    add seeds and nuts but not too many.

    Avoid low fat dairy. Eat full cream dairy.

    Just stay away from all the sugary stuff and fast food if you don't want to regain your weight in a hurry.
    And keep on restricting those alcoholic drinks. A little bit is fine, preferably wine. But more than 2 drinks a day makes you an alcoholic if it becomes a habit.

    Seeing you're having soya yoghurts and such, are you avoiding dairy in particular?

    If you're avoiding dairy then up the count on nuts, seeds and avocado. Carbs would be good for training days I think, just good quality ones!

    Nuts and nut butters definitely. They add quality fat and protein. Avocado is another thing that you might want to consider. Some Quacomle with cucumber chips. If you're looking for a way to add good fats, baked pepperoni slices with cream cheese will add good fats, taste amazing and kind also give you a "feel good" effect as well, without the carbs.
