Chicken Lettuce Wraps - Pics included
So yesterday I decided to try some Chicken Lettuce Wraps that I had a recipe for. The calorie count is super low, something like 200 calories per serving. Please feel free to use the recipe calculator if you want to calculate it. This makes about 6 servings. This is a pretty easy and yummy dinner!
1.5 lbs boneless skinless chicken breast, diced
2 tablespoon high temp cooking oil, I used peanut oil
Mushrooms, any kind. I used the already sliced fresh and clean ones at the store and diced them.
Any veggies you like. I used broccoli slaw
Green Onions, sliced
1/2 cup apple juice
1/4 cup tamari sauce (aged soy sauce)
2 tablespoons peanut butter
A couple squirts hot sauce
Grated ginger
Grated Garlic
Salt to taste
Crushed Peanuts
Iceberg Lettuce
*In your cooking pan add the oil and let heat for a moment.
*Add chicken, cook.
*Once chicken is cooked, add all your veggies and stir around and cook for a few minutes.
*Scoot your chicken and veggies along the side of the pan and make a clear whole in the center of the pan.
*Add apple juice, tamari sauce, peanut butter, hot sauce, grated ginger, and grated garlic. Whisk together in the center of pan until it makes a nice sauce consistency.
*Mix the chicken/veggies with sauce.
*Add salt to taste if needed.
Top with crushed peanuts and serve with iceberg lettuce.
I had a lot of calories left over yesterday so I added a little bit of noodles to mine.
