Calories in calories out has always seemed like a huge oversimplification to me.... like we're trying to apply Occam's razor to the human body. I'm glad science is finally throwing that BS out the window.

Not with you about throwing it out - because it is 99% true. I do agree about the over simplification, though...the world is dumb and people need simple to get things through their heads.
THE ONLY REASON I say it is too simplified is because I was eatting too little and did not lose weight but plateaued for a period of 8 months. Basically, I ate less and moved more...way too much more than I initially thought.0 -

It will always be true on as a basic principle.
Though, estimating how many calories we take in and how many goes out especially, is not simple at all.
Estimating what a calorie is biologically is incredible difficult, and something that is still being refined all the time. I study food science, and our professors hate teaching caloriemetrics because it's so inaccurate, they kinda feel iffy about calling it scientific.
However, I don't see how that changes the course of action if someone wants to change or maintain their weight. If someone is maintaining and wishes to be lose, the answer will still be to create a deficit. If you are not losing, then you aren't in a deficit, even if the calorie-estimations seems to suggest you are.0 -
