Hi MFP,
I need to start cooking more vegetarian meals with a focus on lentils, chickpeas, beans and tofu. Can you recommend some delicious dishes that include any of the listed ingredients?

I just made a lentil stew last night with brown lentils, carrots, onions and kale. I am not a vegetarian so I added ham to mine but it would be great without meat too. Here is a similar recipe to the one I made but no meat:

The other dish I love is Mujadarrah (rice and lentils with fried onions) There are many versions of this dish available but I like this one:

I'm not vegetarian myself but I was instructed to introduce at least 3 meatless dishes/week into my diet. I know a grand total of one tofu dish so I'm a little out of my comfort zone.
Both dishes look great and I can't wait to try them!0 -
Curious as to why you have to have 3 vegetarian meals per week?? (Seriously just curious)

I do a Moroccan chicken dinner that is absolutely out of this world, and would be just as good without the chicken, maybe even subbed out with extra-firm tofu cubes. It sound really weird, but I swear it works, it is fabulous:
1-2 cans chickpeas
6+ oz baby carrots
1/2 cup golden/regular raisins
1/2 large lemon, in slices or wedges
2 tsp minced garlic
1 T lemon juice
1/2 tsp cinnamon
1 T honey
Simmer in electric skillet or crockpot until carrots are cooked to your liking. Eat as is, or served over rice or lentils.
I don't really use a recipe for this, the above is just an estimation. Tweak it to your own liking.0 -

In answer to your question it was one of many recommendations made to reduce to manage cholesterol intake for a family member. Other suggestions include avoiding saturated fats which are mostly found in animal foods like high fat milks and other dairy products, choosing white meats only from poultry, and choosing lean cuts of meat like pork or beef tenderloin and extra lean ground meats only.
I can also make "meaty" versions as well but I wanted to attempt 3 meatless meals as instructed. I LOVE stuffed shells.0 -

I love Chana Masala. very easy to make and so tasty. fills you up. We tend to have cubed potatoes in there too and also have like a crunchy side to sprinkle on top. ( like ready salted crisps crunched over the top)
As for lentils theres so much variety and flavour in the different dishes. wish i could cook them, ill try and find a few recipes of my favs and send you ...0 -

Just trying to work out where the liquid comes from to 'simmer' the carrots.
Do you include the liquid from the cans of chickpeas ?

I second the Mujadarrah suggestion. I've made a giant batch with brown rice, lentils, and caramelized onions. It is super yummy and filling, and it freezes really really well.
Sometimes if I feel lazy I'll make tikka masala chick peas and carrots with Seeds of Change Tikka Masala sauce. It is really good for a bottled sauce.
I highly recommend you check out the Oh She Glows website. She has lots of beautiful, yummy vegetarian meals made from scratch. Some of my favorites are the raw rainbow pad thai, best veggie burgers, and big vegan bowl.0
